I dunno but it's really annoying.
You would think that they would at least try to be more adventurous.
The worst I had offered to me as a veggie alternative was a cheese & onion pasty in tomato soup!

I guess it depends who supplies their food. Most pubs apart from the home cook ones (ie not chains) buy their food in and re-heat or steam it then serve it.
So I guess if the options on veggie are limited it would explain why most pubs share similar unimaginative veg menu options.
Avoid em and go for places that cook their own, you wait a bit longer but its worth it just to not say that tired looking pasta thing with its salad garnish!

Because it's easy to cook, easy to keep warm once cooked and you can vary the portions....
That's the problem if you eat in a pub which does food as a minor sideline, it's rarely very imaginative.
Look out for a good gastro pub instead.

im a cook in a pub and we dont offer lasagne as a veggie option althugh we dont have very many options,(6 plus salads) all our food is homemade and where possible not frozen n reheated, my thinkin is that if i wanted a frozen lasagne id go asda n get 1 for a quid n wouldnt pay 8 quid for 1 in a pub.

Most of the answers are correct, time-saver, retainability, easy to heat etc. but what's missing is the fact that smaller 'pubs' don't expect many vegans and their limited ideas include salads,and more salads, which mean buying different leafy lettuces to them and if nobody orders them then those lettuces go bad and they feel they've lost their investment. All of this is misguided due to lack of creativity

As a veggie myself I have to agree with previous answers and say yes it is due to lack of imagination, bulk buying and costs. If it isn't vegetable lasagne then it's penne in tomato sauce - WOW!

I think its because most pub lasagne has so little meat in it, they can just cook one dish and serve it to meat eaters AND veggies!

I think that's because vegetarianism is on the decline and most are very annoying in restaurants, that the chef can't be bothered to think of anything exciting to make.Meat is good.
