Likley the ginger and other spices. It is a natural reaction to products that irritate the mucus membranes.

It's probably a reaction to the hotter spices, especially the ones in the chili pepper family. You may have similar reactions after eating Mexican, spicy Thai, or some of the hotter curries.
But it's worth it......(grabbing kleenex, while scarfing down hot and sour soup, followed by extra-hot General Tso's chicken)!

Because many Chinese foods have strong spices in them like mustard, curry and chili peppers. Many strong spices can make your nose run. I depends on how you handle the heat of the spice.

If the Chinese food is hot (e.g. Szechuan) then your reaction is because of the spices.
If the Chinese food you eat is bland, then it is due to allergies to the ingredients in your food.Incidentally, do you have any food allergies?

Most spicy foods will cause that...Not just chinese, but also mexican, indian, thai and any others with many spice mixtures...
I have another problem...
When I have an overhot/strong chili (jalapeño or piquín for example) I get hiccups...!!!!
