Crunchy, Oven Baked Chicken Toes(Tenders)

Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
Your daughter can help with this also.
Age level: 4 to 6 years Skill level: beginner

1 cup corn flakes
1 cup plain bread crumbs
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground allspice - the SECRET ingredient
3 tablespoons vegetable oil
1 1/2 pounds chicken breast tenders, 2 packages, cut into 2-inch pieces by GH (Grown-up Helpers)
1/3 cup all-purpose flour
2 eggs, beaten
1/4 cup honey mustard (recommended: Gulden's)
1/4 cup barbecue sauce

Have your GH (Grown-up Helper) turn the oven on to 375 degrees F.
In a pie pan or other shallow, large dish, pour out the corn flakes. Crush the cereal up with your hands. Mix in bread crumbs, sugar, salt, pepper, and allspice - your SECRET ingredient. Do not tell anybody what your secret ingredient is - ever! If they ask how you make your special chicken toes, tell them about everything EXCEPT the secret.

Drizzle about 3 tablespoons vegetable oil evenly over the breading, tossing and turning it to mix the oil all through the bread crumbs and crushed-up corn flakes. Have the GH pour the oil out slowly. A vegetable oil bottle has a big opening so, 3 tablespoons will pour out pretty quickly, probably by the time you can count to 5, so watch the GH closely and count really loudly!

Have your GH cut the chicken fingers into toes, 2-inch pieces. Turn the chicken in flour, eggs and then in the special crunchy breading. Arrange the chicken toes on a nonstick baking sheet. Make your GH go and wash their hands. Place the chicken toes in the oven and cook 15 minutes or until crisp and brown all over.

Mix together honey mustard and barbecue sauce in a small bowl. Serve hot chicken toes with honey mustard and barbecue sauce for dipping.

Dessert:
Caramel Peanut Butter Dip and Apples
Age level: 4 to 6 years Skill level: beginner

24 wrapped caramel candies (recommended: Kraft brand) 1/2 of a 14-ounce bag
2 apples
2 tablespoons lemon juice
1 cup water plus 1 tablespoon
2 tablespoonfuls creamy peanut butter
Pinch ground cinnamon (this is your SECRET ingredient)

Unwrap candies and place into a bowl.
Have your GH cut the apples into quarters and cut into each quarter to remove the core. The GH should then slice apples into 8 pieces per apple. Count for them and make sure they make even slices. You need 16 slices, total. Squirt some lemon juice into a bowl with 1 cup of water in it. Add the sliced apples and turn them around in the lemon water then drain them in a strainer or colander. Lemon juice is sour, but it's only a tiny bit on lots of apple slices. The apples will still taste sweet and really good. The skin of an apple keeps them from turning brown before you cut them, but apples will turn brown once they are cut up and the air can touch their insides. Lemon juice is acidic. That means that it has special properties in it that can keep apples from turning brown.

Add 1 tablespoon water and peanut butter to your caramel candies. Place candies in microwave oven on high for 2 minutes. Stir the dip with a rubber spatula. If the candy is not melted all the way, put it back in the microwave on high for another 20 seconds. Add a pinch of cinnamon to the sauce and stir. DO NOT TELL ANYONE ABOUT THE CINNAMON! Tell your GH not to tell, too. This is your secret ingredient.

To serve, place drained, sliced apples next to your caramel and peanut butter dip and start dunki

Grilled Cheese is always great for the little ones. If they like tomatoe soup, make it fun with some shredded cheese or crackers. I always liked chicken noodle soup when I was little.

I love Baked Ziti. Since it's a one-dish meal there is very little clean-up and there is a TON of flavor in it. Also, the recipe that Rachael Ray makes (above) only takes 30 minutes to whip up! YUM-O!

give her finger foods, such as chicken nuggets, carrot sticks, crackers, and cubes of cheese. give her dipping sauces with the chicken and carrots, and let her use her crackers to make mini sandwhiches. She'll have a ball.
