Boil some red potatoes till done, the throw in some cabbage and some onion, (I like mine quartered), and the leftover pork, a little salt and let it catch a boil till the cabbage and onion is tender.

cook white rice with a variety of your favorite herb flavoring. put cooked (hot)rice in casserole dish and spread it out. put small slices of pork on top of rice. slice Velveeta cheese into 1/4 inch slices and cover the rice and pork. put under broiler long enough to melt, not burn, the cheese. serve with Pace salsa. you can use other cheeses, or salsa, i just happen to prefer Velveeta and Pace with this dish. i also use other meats. cheap, fast, and good
