I want to make it in my crockpot. When I've tried before the beef comes out all in one peice and needs to be sliced. I want the kind that falls apart in chunks. Any suggestions?

Yes, a chuck roast would be your best bet. However, there are three different kinds of chuck roasts that are suitable for Yankee pot roast. The 7-bone pot roast is well-marbled and incredibly beefy in flavor. Incidentally, it gets its name from the shape of the bone found in the roast. Because it's usually only around 2 inches thick, less liquid and less time are needed to cook this roast. The top-blade roast is also well-marbled and has lots of fat and connective tissue (which contains the collagen that melts to make the sauce or gravy in your roast so nice and thick). Finally, there is the chuck-eye roast, which is usually sold in a roll tied up with butcher's twine. It is the fattiest of all three and the most commonly available. Its high fat content gives a pot roast great flavor and tenderness. Because it is thicker, it will take the longest time to cook. As long as you cook the roast for the appropriate time for its size, and it has reasonable amounts of marbling, you will get a tender, fall-apart dinner. Yum!

Pot roast is a cut all by itself, but you can use chuck roast instead. It's surprising that anything cooked in a crock pot needs to be sliced, as it usually falls apart because it cooks so tender.

Pot roast is best or even blade roast or 7 bone roast. Make sure you add liquid and cook long enough, especially in a crock pot. The meat will shred apart. Don't forget the potatos, baby onions and carrots! :-)

if you want a roast that will fall apart, get one with the most fat, the fat disolves while being heated, making the meat fall away from it. not very healthy, though. it's called yankee pot roast because it was the cheapest cut.
