"O.K." is not really an abbreviation; the word was either borrowed from the Choctaw language or brough over from West Africa by slaves, and in the beginning was typically spelled "okeh" or "okay." It was only through the lexicographic equivalent of a smear campaign that dictionaries because to list it as an abbreviation, based either on a spurious connection to Martin "Old Kinderhook" Van Buren or a Boston slang term "oll korrect." Basically, one old white guy just couldn't believe that this great word could've been invented by anyone other than another old white guy.
"Okeh" has fallen out of favor right now, but the spelling "okay" is perfectly, well, okay.
