Game Day Football Sub
2 (16 oz. each) loaves frozen Italian bread
1/2 cup mayonnaise
3 tablespoons prepared mustard
2 teaspoons prepared horseradish (optional)
8 oz. thinly sliced cheddar cheese
8 oz. thinly sliced Fontina cheese
8 oz. thinly sliced salami
8 oz. thinly sliced turkey
8 oz. thinly sliced ham
Leaf lettuce
Sliced onions
Sliced tomatoes
Thaw frozen bread in refrigerator overnight or at room temperature. On a lightly floured board, knead loaves together; form into ball with one smooth side. Cover and let rest 15 minutes.
Spray Football Pan with vegetable pan spray. Place bread in pan, smooth side down; let raise
1-1/2 to 2 hours or until doubled. Preheat oven to 350. Bake 25 to 30 minutes or until browned. Cool 5 minutes; remove from pan and cool completely.
Split; spread with mayonnaise and mustard. Place cheese and meat in overlapping slices on bottom half of bread.
Add lettuce, tomatoes and onions and top half of bread; press lightly and wrap in plastic wrap or foil.
May be refrigerated up to 6 hours before serving.
To serve, slice in 1 to 1-1/2 in. slices.

Good crusty French or Italian bread is the main key.
Good quality meat and cheese is another.
Here's what I put on my subs:
Lettuce, tomatoes, red onions, Italian dressing or red wine vinegar dresing, and Italian seasoning
Smoked or Polish ham
American cheese
Roasted or Italian beef
Corned beef
Hard salami
Smoked or Baked turkey or chicken
Have mustard, mayonaise, pickles, peppers, and olives handy just in case anyone wants them. ALSO plenty of chips.

Ham Salad Subs
2 to 3 cups ham cubed or chopped
1 (8 oz.) pack cream cheese Softened
1 small onion chopped fine
2 to 3 ribs of celery chopped fine
1/4 red bell pepper chopped fine
1 1/2 tsp. minced garlic or 2 small garlic cloves chopped fine.
1 cup mayonaise or salad dressing
2 Tablespoons dijon mustard
8 oz. shreded cheddar cheese
1/4 cup finely chopped fresh parsley or 2 Tbsp. dried parsley
Kaiser rolls
makes about 6 to 8 servings

In a mixing bowl beat cream cheese till smooth. combine cream cheese, onion, celery, pepper, garlic, mayo and mustard, beat on low until well combined. fold in ham and parsley.
Cut kaiser rolls and place cut side up in broiler for about 1 minute or until lightly brown.
Spread ham mixture on bottom halves of Kaiser rolls and sprinkle with shreded cheddar, return to broiler unitl cheese melts.
Ingredients:
1/2 cup Mayo - regular or light mayonnaise
1/4 cup Italian dressing
3 cups shredded lettuce
1 loaf Italian bread, cut in half lengthwise
1 package (9 oz.) deli sliced meat, any variety
6 slices cheese
1 large tomato, thinly sliced
1 medium green pepper, thinly sliced
Directions:
Mix mayo and dressing. Toss lettuce with 1/4 cup of the mayo mixture. Brush cut surfaces of bread with remaining mayo mixture. Fill bread with meat, cheese slices, tomato, green pepper, and lettuce mixture. Cut into serving pieces.
Greek Sub sandwich
Ingredients:
4 plain sub rolls (6-inch size), sliced
4 leaves green leaf lettuce
16 ounces Roast Beef
1 cup chopped tomatoes
12 pepperoncini peppers, sliced
12 Greek black olives, pitted and sliced
1/4 cup crumbled feta cheese
1/4 cup bottled vinaigrette dressing
1 teaspoon dried oregano leaves
Directions:
On open sub rolls, place lettuce leaves and top with roast beef. Sprinkle on tomatoes, peppers, olives and cheese. Sprinkle each sandwich with 1 tablespoon dressing and 1/4 teaspoon oregano.
