There is a way of turning hyphens (n-dashes) into long hyphens (m-dashes) but I can't work out how!

Actually, the hyphen you are typing is just that, a hyphen (or a minus).

- = hyphen
– = en dash (ALT+0150) use the numberpad
— = em dash (ALT+0151) use the numberpad

The auto-replace functionality in Word is nice, but I like typing the character I want when I want it—I've learned lots of keyboard shortcuts.

If you have an existing document that needs them converted, just use Find and Replace. Type the hyphen in the "Find What" field and the search character for the em dash or en dash in the "Replace With" field. Use ^+ for em and ^= for en.

when you type, make a space before the hyphen, press the hyphen, then press space. i use m-hyphens all the time!

In Word-- Insert/Autotext/Auto Format as you Type/, then check the box, ' Replace-symbol characters with symbols'
