Not a casserole but I've done this many times.

Line muffin tins with sliced ham
Break an egg into each well.
Add a tablespoon of cream
Top with favourite shredded cheese
Back at 400 degrees for 15 min.
Serve with toasted English muffins or biscuits

You can change it up by adding different ingredients:
Tomatoes , Salsa, Roasted Red Peppers. Anything you can think of that goes with eggs.

A few pan fries, sliced melon or broiled tomatoes and you have a tasty easy breakfast for a group.

White bread with crusts removed
Ham slices
Sharp Cheddar cheese, sliced or shredded
6 eggs
3 cups of milk
1/4 cup chopped onion
1/4 cup shopped green pepper
1/2 tsp salt
1/2 tsp pepper
1/2 - 1 tsp dry mustard
1 - 2 tsps Worcestershire sauce
Dash Tabasco
1/4 lb melted butter
Cornflakes or Special K cereals


Preheat oven to 350°
Grease 9"x13" pan
Layer pan with bread, ham, cheese, then bread again (like a sandwich)
Spread chopped onion and green pepper on top
Place milk in bowl or blender, add eggs and spices, then beat together
Pour mixture over strata and cover
Refrigerate overnight or freeze (if frozen, thaw in fridge overnight)
Before baking, pour melted butter and crushed cornflakes on top
Bake for 1 hour
Let stand 10 minutes before serving
Cut in 12 portions

BREAKFAST
Recipe 1: Egg/Hash Brown Skillet

One package of bacon
One bag of Hash Browns (the home fry style, chunks, not shredded)
6 eggs
1 cup of cheese (I use cheddar)

Cook the Bacon in a cast iron skillet. Remove from pan and set aside.
Cook the frozen hash browns in the same cast Iron skillet. When they are done Turn heat down to simmer, make five holes around the perimeter and one in the middle. Crack open an egg and place it in the hash brown hole. Do the same with the remaining eggs and remaining holes. Cover with a lid and cook until eggs are done to your satisfaction. Crumble bacon over top and sprinkle cheese. And put lid on for a couple more minutes or until the cheese is melted.

Scoop out some hash browns with the egg. Serves 6 people.

Recipe 2: Tator Tot and Egg Casserole

9 eggs
3 cups warm milk (not boiled)
salt and pepper to taste
1 1/2 cups diced ham
1 1/2 cups Colby jack cheese-shredded
2lbs Tator Tots

Mix eggs, milk, salt and pepper together. Set aside.

Spray a 9x13 pan. Line it with a single layer of tator tots. Slowly pour the egg mixture over the tator tots to keep them submerged. Sprinkle with ham and cheese over the top.

Bake one hour at 325.

Try making pancakes....1 cup of flour, 1tablespoon sugar, 1 teaspoon baking powder,1/4 baking soda,1/4 teaspoon salt,1 beaten egg, 1cup buttermilk and 2 tablespoons cooking oil. Mix dry ingredients first, then add wet ingredients, mix thoroughly. Lightly grease a skillet, pour 1/4 batter into a 3-inch circle. Cook on medium heat for approximetly 2 min on each side or until light golden brown color! Serve warm. I always add fruit and syrup with butter on top. Fills you up!! Only takes about 10min to prepare and only 4 min to cook. U could always make a big batch in advance too, just be sure to use it in a few days of making it...and keep it in the fridge! Also, if you'd prefer something cold...try making a fruit and yogurt smoothie! Put whatever fruit you'd like with some yogurt/oj with ice into a blender...done in a few min!! I buy a big bag of frozen mixed fruit, and use that in my smoothies. Makes a great meal,or evening snack!! Hope that helped!

EASY OVEN BRUNCH BAKE

4 eggs
2 cups milk
1 tsp. GREY POUPON Dijon Mustard
3 cups cubed French bread
1 pkg. (8 oz.) KRAFT Shredded Mild Cheddar Cheese
1 cup chopped mushrooms
1 cup chopped red peppers
1/2 cup chopped green onions
1/4 cup OSCAR MAYER Real Bacon Bits
1/4 cup chopped OSCAR MAYER Ham, any variety



BEAT eggs, milk and mustard in large bowl with wire whisk until well blended. Add remaining ingredients; stir gently to mix well.
POUR into lightly greased 12x8-inch baking dish; cover. Refrigerate several hours or overnight.
PREHEAT oven to 325°F. Uncover baking dish. Bake 45 to 50 min. or until knife inserted in center comes out clean.

INGREDIENTS:
3 eggs, beaten
1 pinch ground black pepper
1 (10.75 ounce) can condensed cream of chicken soup
16 ounces sour cream
1 (2 pound) package frozen hash brown potatoes, thawed
2 cups cooked ham, cubed
1 onion, chopped
3/4 cup shredded Cheddar cheese
1/4 cup butter, melted



DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Season beaten eggs with pepper; pour into baking dish. In a large bowl, combine soup, sour cream, hash browns, ham, onion and cheese. Mix thoroughly and pour over eggs.
Bake uncovered for 30 minutes. Remove and drizzle butter over top of casserole. Return to oven and bake for an additional 15 minutes, until golden.

Egg Pasta Frittata

1 12 ounce box egg fettuccini pasta
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 cup heavy cream
1 cup grated Parmigiano-Reggiano
1/4 to 1/2 teaspoon grated or ground nutmeg, eyeball it
Salt and black pepper
1/4 cup chopped flat-leaf parsley
12 extra large eggs, beaten
HamSteaks, recipe follows

Preheat oven to 425 degrees F.
Bring a large pot of water to a boil and salt it. Add pasta and cook 6 minutes -- to a chewy al dente. Pasta will continue to cook in frittata. Drain and reserve.

Heat a large nonstick skillet with oven safe handle over medium high heat. If all of your skillets have rubber handles, cover handle tightly in foil to protect it. Add oil and butter and melt together. Add cream and reduce for about 3 minutes. Add cheese and nutmeg, salt and pepper. Toss sauce with cooked pasta to coat. Add parsley and beaten eggs to the skillet and stir gently to combine. Allow the eggs to set up on the bottom of the pan and become firm. Transfer pan to hot oven and bake 10 minutes, until golden. Serve from the pan or transfer to a platter. Serve hot or cold, cutting frittata into wedges and serve with Ham Steaks.

Ham Steaks:
1 tablespoon extra-virgin olive oil
2 to 3 large ham steaks, cut in halves
Heat a large skillet, with olive oil. Add the ham steaks and heat through, 1 to 2 minutes on each side.

Eggs Doodle:
Beaten eggs, bread crumbs, chopped onion, grated cheese. Mix together and bake. When done cover with salsa and sour cream.

My fave is Scottish Farmhouse Eggs. It's sorta like a strata.
