Ingredients Serves 4-6
8 oz. [1 1/3 cups] dried black-eye beans,soaked in cold water overnight and drained
2 pints [5 cups] water
1 1/2 teaspoons salt
8 oz. [1 1/3 cups] long-grain rice, washed, soaked in cold water for 30 minutes
and drained 1 tablespoon vegetable oil
I medium-sized onion, finely chopped
14 oz. canned peeled tomatoes
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
Place the beans in a large saucepan and pour in the water and I teaspoon of salt. Place the pan over moderately high heat and bring to the boil. Reduce the heat to low, partially cover the pan and simmer the beans for 1 1/2 hours.
Stir in the rice, cover the pan and simmer for 15 minutes.
Meanwhile, in a small frying-pan, heat the oil over moderate heat. When the oil is hot, add the onion and cook, stirring occasionally, for 5 to 7 minutes or until the onion is soft and translucent but not brown. Remove the pan from the heat and stir in the tomatoes with the can juice, the cayenne, pepper and the remaining salt.
Pour the onion and tomato mixture into the beans and rice mixture and stir to blend the ingredients. Re-cover the pan and continue to simmer the mixture for a further 15 to 20 minutes or until the rice and beans arc tender. Remove the pan from the heat and serve at once.

Classic Jamaican Rice and Beans - Recipe
INGREDIENTS
3/4 cup dried red kidney beans
2 large garlic cloves, crushed
1 1/4 cups unsweetened coconut milk
2 1/2 cups long-grain rice
3 scallions, chopped
1 1/2 teaspoons fresh thyme leaves
1 tablespoon sea salt
Salt and freshly-ground black pepper, to taste
Water as needed
1. Place beans, garlic, coconut milk and 2 cups water in a medium saucepan and bring to a boil. Reduce heat to low, cover, and simmer the beans until they are tender, about 2 hours.
2. Add 2 1/2 cups water, rice, scallions, thyme, 1 tablespoon of salt, and some freshly-ground black pepper. Bring mixture to a boil, stir, then reduce heat, cover, and cook without stirring about 20 minutes, until rice has absorbed all the liquid.
3. Allow mixture to stand for 15 minutes, still covered. Fluff rice and beans with a fork before serving and add additional salt and pepper, to taste, if desired.
Serves 8.

I eat Jamaican food and they eat red beans and rice with Caribbean seasoning added to it or black beans and rice.
Soak the beans overnight then slow cook them for about 1hr. season to taste. 1cp rice and 2cps. of water boil for 5min. then simmer for 20mins. Mix them together and there you go.
