why is that? any way to overcome that?

salt draws the moisture out of the meat leaving it dry and hard...soak the salted meat in water and put moisture back and salt out i buy salt cured hams and thats what i do to get salt out

Salt brings out the juices in the meat. I use salt after it's cooked.

when cooking meat don't salt untill almost done cooking as salt can make meat tough.
