I love Scottish Farmhouse Eggs. It's super easy if you have bread, cheese, eggs and cream or half and half on hand. Can be assembled in minutes, then you get to sit down and read the news while it bakes.

Breakfast Casserole

Recipe Summary
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 20 minutes
Yield: 6 to 8 servings

2 cups broken blue tortilla chips
1 1/2 cups milk
5 cups day old biscuits
18 eggs
1/2 cup chopped red bell peppers
2 1/2 cups Mexican white cheese, shredded
Cactus Sauce, recipe follows

Preheat 10-inch Dutch oven on open fire. Meanwhile, soak chips in 1/2 cup of milk. This will be your bottom crust. Soak biscuits with remaining ingredients, add extra milk if needed for a wet consistency. Salt and pepper, to your taste. Remove oven from the fire, put chips in first then add the biscuit mixture. Return Dutch oven to the fire. Be careful when putting coals on top and bottom. Cook for 20 to 30 minutes or until slightly firm. Serve with cactus sauce.

Cactus Sauce
14 ounces diced chiles
3 to 4 ripe avocados
Puree all ingredients together and refrigerate.

Yield: 6 to 8 servings

Inactive Prep Time: 2 hours

Banana Breakfast Fruit Smoothie

Recipe Summary

1 banana, peeled, cut into chunks, and frozen
1 teaspoon pure vanilla extract
1 1/2 cups orange juice
1 cup ice
2 scoops vanilla ice cream

Combine all ingredients in a blender. Blend until smooth.

Strawberry Yogurt Breakfast Split

For individual servings; peel and split 1 banana. Place banana halves in serving bowl. Top with 4 ozs. (1 cup) fresh strawberries, 4 ozs. (1/2 cup) yogurt, and 1 Tbsp chopped, toasted almonds


Cinnamon Raisin French Toast

3/4 cup evaporated skimmed milk, undiluted
1 large egg
1/2 tsp vanilla extract
1/8 tsp salt
8 slices cinnamon raisin bread
2 Tbsp butter


Put evaporated milk, egg, vanilla and salt into a shallow bowl; beat with a fork until well-blended. Dip slices of bread into mixture one at a time, turning to coat both sides. Choose a nonstick skillet that measures 9 to 10 inches across the bottom. Heat over moderate heat, adding 1 Tbsp of the butter. When melted, add 4 slices of the dipped bread and cook 2 to 3 minutes on each side until browned. Remove to warm platter or plates and keep warm while you cook remaining bread.
Suggestion: Garnish with a few strawberries and banana slices. Sift a little confectioner's sugar over the toast. Serve with honey or with apricot pourable fruit.

Strawberry Smoothie

1 package (10 ounces) frozen strawberries, thawed
4 cups milk
1 pint (2 cups) strawberry ice cream
1 teaspoon grated lemon zest

In an electric blender, combine half of the strawberries, milk, ice cream, and lemon zest. Blend at high speed for 1 minute; transfer to pitcher or tall glasses. Repeat for second batch.
Strawberry smoothie recipe makes about 8 cups.

One of my favorites is to beat 3 eggs and some milk in a bowl, add chopped onions, tomatoes, peppers, etc. In a pan, brown down sausage or hamburger. Mix it all in a baking dish, lightly cover with shredded cheese and bake it for 30 minutes at 350 degrees. Want to zest it up more? Roll the cooked mixture into tortilla shells and add your favorite topping like salsa or taco sauce.

I love omelets... with cheese and a few bacon pieces and even some chopped veggies mixed or folded in... you can vary them greatly from day to day just by the ingredients you add in...

I also love peanut butter spread on a hot flour tortilla but I like that more for lunch than breakfast... haven't tried it with bananas tho.

Yum Yum, my wife looks forward to me making this every weekend:

I can of Pillsbury Flaky Biscuits
1 pound jimmy dean Sausage
American Cheese
eggs

Preheat oven to 350 degrees. melt 1 stick of butter in the microwave, pour into a 9x13 dish, roll biscuits around in the butter front and back, put into oven until golden brown.
Fry your sausage into individual patties big enough to fit on your biscuit. Put patties in micro to keep warm. cook your eggs, and top with cheese while still in the skillet. take out your biscuits, pull in half, put on your egg and cheese, and your sausage, and bolioa, you just topped micky D for the best sausage biscuit!!!!

It's not for everybody, but one of my favorite things to eat for breakfast is this:
Get a flour tortilla and spread with peanut butter. Add sliced bananas and roll up. Very yummy.

Gosh, such a vague question. If your in a hurry,, eat something left over from last nights dinner,,, like cold pizza! YUMMY! If you're not in a hurry, then my fav. is chicken fried steak, hash browns and eggs over easy with toast!

I'll give you seven, one for every day of the week:

Sunday- find your favorite pancakes and fill tiny dipping cups up with your favorite sauces. Tear pancakes and dip. My favorite sauces are Chocolate Syrup, Honey, and softened chocolate ice cream. Drink milk or chocolate milk (or other flavored milk).

Monday- Buy enriched bran flakes, the kind with all the vitamins. Top with a handful of Cheerios or Honey Nut Cheerios and skim milk.

Tuesday- Buy Quaker Cheddar Cheese instant grits (or another variety you like). Set it up for microwave cooking, but throw in two Morning Star Vegetarian Sausage Links (or cook two of your favorite sausage links and throw them in). Cook. Chop up the sausage in the grits and stir. Eat with milk and a plum or your favorite fruit.

Wednesday- Cover one or two of your favorite rice cakes with peanut butter and your favorite sliced fruit-- especially bananas-- and/or a slice of cheese. You can also throw on toppings like nuts, chocolate chips, seeds, raisins, etc. Eat with lots of milk.

Thursday- Buy a pre-made muffin or slice of bread of a flavor you like (I like banana nut or pumpkin). Heat slightly in the microwave, if you like. Eat with a slice of cantaloupe and turkey-cheese roll-ups (wrap turkey slices around string cheese and secure with a toothpick). Drink hot tea of your favorite kind (I like green tea).

Friday- Heat up two Morningstar vegetarian sausages (or another kind, if you like). Smash up with a banana. Eat with milk and toast.

Saturday- Treat yourself to a McGriddle or Crossanwich or other breakfast sandwich from your favorite restaurant, a glass of milk, and a cinnamon roll-- I like Hardee's the best!
If you prefer to eat at home, beat an egg up with any kind of chopped meat, cheese, and peppers. Instant southwest omelet. Eat with toast and milk and fruit.
