Lemon & Cilantro Chicken: Ingredients: * 3-4 lbs broiler chickens * 1 teaspoon salt * 1 teaspoon pepper * 1 lime * 1/2 cup fresh cilantro stem * 2 garlic cloves, peeled Directions: 1. Wash & dry the chicken. 2. Reserve the giblets and neck for another use or toss in trash! 3. Season the chicken inside and out with salt & pepper. 4. Place in the cooker breast side up. 5. Squeeze the juice of the lime over the chicken. 6. Put the remains of the lime, the cilantro and the garlic inside the cavity. 7. Cover and cook on the low setting for 6-7 hours or until an instant read thermometer reads 180F in the thickest part of the thigh. 8. Transfer the chicken to a platter. 9. Pour the liquid from the cooker into a separate container and refrigerate for another use.

Chicken Cilantro

INGREDIENTS:
1 tablespoon vegetable oil
1 red onion, coarsely chopped
4 skinless, boneless chicken breast halves - chopped
1 bunch fresh cilantro, chopped
1/2 head garlic
1/3 cup water
1 (15.5 ounce) can hominy, drained
1 cup uncooked long grain white rice
1 cube chicken bouillon
salt to taste
1/4 teaspoon freshly ground black pepper

DIRECTIONS:
Heat the oil in a large pot over medium-high heat, and saute the onion until tender. Place the chicken in the pot, and cook until lightly browned.

Puree the cilantro, garlic, and 1/3 cup water in a blender or food processor. Mix into the pot with the chicken and onions. Cook and stir about 5 minutes, until mixed and heated through. Pour enough water into the pot to cover all ingredients.

Mix the hominy, rice, (YOU COULD USE FETTUCINI INSTEAD)and bouillon into the pot. Bring to a boil, reduce heat, cover, and simmer 20 minutes, or until rice is tender. Increase the amount of water as needed to attain desired consistency. Season with salt and pepper.

4 skinless, boneless chicken breasts
3 tbsp. olive oil
Juice of 1 lemon
1 tbsp. white wine Worcestershire sauce
2 tsp. ground green peppercorns
1 (14 1/2 oz.) can stewed tomatoes
Lg. handful fresh cilantro, chopped (can substitute 1 1/2 tbsp. dried)
Salt/pepper to taste
1/2 tsp. garlic powder
2 tbsp. flour
1/2 c. chicken broth
3 tbsp. chopped onion
3 tbsp. chopped bell pepper

Heat olive oil in skillet and brown chicken breasts on both sides. Add onion/bell pepper; cook until onion is clear. Remove chicken to a plate and add flour to remaining oil. Mix until thickened, then add chicken broth to make a sauce. Return chicken to skillet. Add white wine, Worcestershire sauce, lemon juice, tomatoes, garlic, peppercorns, cilantro, and salt/pepper. Cook, covered, on low 1/2 hour. Serve with rice or fettuccine. Can garnish with fresh avocados

"THAI CHICKEN FETTUCCINE SALAD

3 boneless skinless chicken breasts (about 1 pound)
6 ounces uncooked fettuccine
1 cup salsa
1/4 cup chunky peanut butter
2 tablespoons honey
2 tablespoons orange juice
1 teaspoon soy sauce
1/2 teaspoon ground ginger
2 tablespoons vegetable oil
lettuce or savoy cabbage leaves (optional)
1/4 cup coarsely chopped fresh cilantro
1/4 cup peanut halves
1/4 cup thin red pepper strips, cut into halves
additional salsa (optional)

1. Cut chicken into 1-inch pieces; set aside.
2. Cook pasta according to package directions; drain.

3. While pasta is cooking, combine 1 cup salsa, peanut butter, honey, orange juice, soy sauce and ginger in small saucepan. Cook and stir over low heat until blended and smooth. Reserve 1/4 cup salsa mixture.

4. Place pasta in large bowl. Pour remaining salsa mixture over pasta; toss gently to coat.

5. Heat oil in large skillet over medium-high heat until hot. Cook and stir chicken in hot oil about 5 minutes until chicken is browned on the outside and no longer pink in center.

6. Add reserved salsa mixture; mix well.

7. Arrange pasta on lettuce-lined platter, if desired. Place chicken mixture on pasta. Top with cilantro, peanut halves and pepper strips.

8. Refrigerate until mixture is cooled to room temperature. Serve with additional salsa. Garnish, if desired.
