Most cheese cake recipes generally give a 4 hour time frame to chill. If the cheese cake is made the night before it can be refridgerated and left in the pan until you are ready to use it, and at that time just simply remove and serve.

You DO NOT want to place the cheese cake in the freezer to expedite the chill process. It will make not only the crumb bottom but the cheese cake itself watery from moisture. The drastic change in temperatures causes condensation/moisture to build up and this will be through-out the cheese cake.

Always when baking a cheese cake, once it has completed in the oven and is removed place it on a wire rack to cool completely before placing it the refridgerator.

I hope this has helped you out.

you dont want to put cheesecake in the freezer after you make it...it will crack and look nasty. Four hours should be plenty for refrigeration.
