1 lb beef tenderloin or sirloin steak
2 tsp butter
2 tablespoons ketchup
1/2 lb mushrooms, sliced
1 medium onion, minced
1 can beef broth
1 clove garlic
salt
3 tsp flour
1 cup sour cream
noodles
Cut meat across grain in 1/2" strips, about 1 1/2" long. Melt butter in skillet and add mushrooms and onion. Cook and stir until onion is tender. Remove from skillet. In same skillet cook meat until brown. Reserving 1/3 cup broth, stir in remaining broth, ketchup, garlic and salt. Cover, simmer 15 minutes.
Blend reserved broth and flour, stir into meat mixture. Add mushrooms and onion. Heat to boiling, stirring constantly. Boil and stir 1 minute. Reduce heat and stir in sour cream, heat. Serve over noodles.

Ingredients:
1 1/4 pound fillet mignon or fillet of beef -- sliced
2 tablespoons butter
1 tablespoon olive oil
1/4 pound mushrooms -- sliced
1 1/2 tablespoon shallots or green onions -- minced
1 medium onions, to taste - optional -- sliced
2 tablespoons flour
1/4 cup sweet sherry
1 can beef broth
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup sour cream
Directions:
Slice meat thin, about 2"x2" (it is easiest to slice real thin by partially freezing the meat first) - be sure ALL fat is trimmed off. Heat 1 Tbsp. of butter and 1/2 Tbsp. oil in a large frying pan. Saute the mushrooms over medium heat for about 3 minutes. Add the onions and/or shallots, saute 2 minutes more. . .remove ALL from skillet.
Heat remaining butter and oil, until it bubbles, then add the meat and brown. Remove the browned meat from the pan. Put the flour in the pan and mix in with the oil in the pan until well blended. Gradually add the sherry and the beef broth, being sure the mixture is SMOOTH. Cook over high heat and turn to medium-high and cook down 1/2.
Add meat and season (to taste) and add the mushrooms/onions. Cook over medium-low heat about 5 minutes, stirring frequently. JUST BEFORE serving stir in sour cream. DO NOT ALLOW TO COME TO A BOIL- it will curdle. Serve over noodles.
NOTES : You can use beer in place of sweet sherry if you don't have any.

this will feed 4 people
1 lb fillet of beef(tail end)
2 oz butter or oil
1 oz finely chopped shallots(small onion)
1/4 pt dry white wine
1/4 pt cream
juice of 1/4 lemon
chopped parsley
cut meat into strips(1/2 inch. x 2 inch)
place butter in large frying pan on high "fierce" heat
add beef strips,season with salt and pepper and allow to cook quickly for few seconds,the beef should be brown but underdone.
drain the beef into a colander.
add the shallots,cover with a lid and allow to cook gently until tender.
drain off the fat,add the wine and reduce to 1/3 of its amount.
add the cream and reduce by a 1/4.
add the lemon juice and the beef strips-do not reboil as the cream will curdle.
taste then add more salt or pepper if needed.
place on a plate with long grain rice sprinkle with chopped parsley.
top restaurant quality,enjoy.

Simple Spicy Stroganoff
1 cup beef, cooked and shredded
1/2 cup onions, sliced very thin
1/2 cup shredded cheddar cheese
1 cup uncooked egg noodles, flat and curly
1 cup diced tomatoes
1/4 cup jalapeno peppers, diced and seeded
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon sour cream
Cook the egg noodles in a quart of salted water until done. Drain, but save 1/4 cup of the cooking water.
Saute the onions until transparent, then add the meat and cook until hot.
When the noodles are nearly done, add the tomato, peppers and sour cream to the frying pan, stir and then add the drained noodles.
If the mixture looks too dry, add the pasta water and stir.
Salt and pepper to taste.
Plate and top with the cheddar cheese.

Noodle Stroganoff
Ingredients
1/4 c Butter or margarine
1/4 c Sliced scallions or onions
1 Garlic clove; minced
1/2 lb Mushrooms; sliced
1 lb Ground beef
3 tb Lemon juice
3 tb Burgundy or other red wine
1 cn Beef consomme
1 ts Salt
1/4 ts Pepper
4 oz Medium egg noodles
1 c Sour cream
Snipped parsley
Instructions
In hot butter in skillet, saute scallions, garlic and mushrooms until lightly browned. Add beef; cook, stirring, until red colour disappears. Stir in lemon juice, burgundy, consomme, salt and pepper. Simmer, uncovered, 15 min. Stir in uncooked noodles. Cook, covered, 5 min., or until noodles are tender. Mix in sour cream; heat quickly but do not boil. Serve at once, sprinkled with parsley.
and this is a recipe for beef stroganoff soup that we use at the restauraunt I work at
Beef Stroganoff Soup
1/4 C. butter
1 lb. tenderloin tips cubed
2 cloves garlic minced
12 oz. mushrooms sliced
1 large onion diced
1 C. shredded carrots
1 pint of water
1 T. beef base
Roux made of 1/2 C. butter and 1/2 C. flour
salt and pepper
1 pint of whipping cream
1/2 C. sour cream
1/4 C. chopped chives
In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.
Add mushrooms and onions. Saute until onion is translucent.
Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.
Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.
Ladle soup into bowls and top with chives.
Makes 6 - 8 servings.

1 lb braising steak
2 large onions
2 red peppers
2-3 garlic cloves
1 tbsp of caraway seeds
1/2 tbsp oregano
paprika
cayenne pepper
blck pepper
2 tins of tomatoes
2 glasses of red wine.
1) Sautee onions, peppers, garlic
2) Remove from heat and add to large cooking oven proof dish
3) Season the beef in plain flour salt and pepper.
4. Seal the beef quickly in the same pan that you sauteed the onions in.
5) Add the beef to onions & peppers.
6) add the wine, tomatoes and plenty of cayene & paprika
7) heat for 1.5-2 hours on 170c
YOU WILL LOVE THIS!!!

The best Beef Stroganoff recipe I use is more like a hotdish (cassarole).
You'll need:
1lb. hamburger
3/4 bag of wide egg noodles
1 can cream of mushroom soup
1 cup milk
Cook the egg noodles.
Brown hamburger and drian.
Mix hamburger, egg noodles, soup, and milk together in a cassarole dish, cover and bake at 350 degrees until boiling (about 20-30 minutes)

Beef stroganoff
1 T. Butter
¼ cup chopped onions
½ of a red bell pepper sliced ¼ inch thick
8 oz baby bell mushrooms slices
1½ cups water
6 oz extra wide no yolk noodles
17 oz package fully cooked beef pot roast
¼ cup reduced fat sour cream
Salt to taste.
1/8 t. black pepper
In a large pot, combine butter, onions, bell pepper, mushrooms, water and noodles. Boil 5-6 min. or until most of the liquid is absorbed
Remove meat for package (reserve gravy) and cut into bit sized pieces.
To noodle mixture, stir in pot roast and gravy. Cook, uncovered, 2-3 min until hot, stirring often. Remove from heat; stir in sour cream and season with salt and pepper.

Easy One Skillet Stroganoff
1. BROWN 1 thinly sliced onion and 1 cup sliced mushrooms in 1 Tbsp. oil in a non-stick skillet.
2. ADD 2 pouches simulated ground beef, 1 can (284 mL) vegetable broth, 1/2 cup water, 3 cups raw egg noodles and 1 tsp. minced garlic. Bring to boil, reduce heat to medium-low and simmer, covered for 10-12 minutes or until noodles are tender. Remove from heat.
3. MIX in 1 cup fat free sour cream. Top with chopped fresh parsley if desired.

Mushroom Beef Stroganoff

Ingredients:
1 Tbsp. oil

2 1/2 tsp. Worcestershire sauce
1/4 cup plain yogurt
4 cups PRIMO Broad Egg Noodles
Directions:
BROWN steak, onion and mushrooms in oil in frypan over medium-high heat.
STIR in soup, ketchup and Worcestershire sauce. Simmer over medium heat 3 to 5 minutes. Stir in yogurt and heat through. Serve over cooked egg noodles.

Kater tot has a good recipe above. My magic ingredient that always gets compliments is Worchestire Sauce - and a bunch of it!!! Use it when browning the beef and use it when mixing all ingredients together!
