Carrots, celery and potatoes - onion of course, all organic for the incredible flavor.
The *best* chicken noodle soup we've ever made we used Organic chicken broth (low sodium) and organic chicken Also Organic Gourmet makes these cubes that are flavor-enhanced - you could dissolve one in hot water and add that - it's very concentrated so one would do.
Also add organic parsley (destemmed). My husband used to make fun of my organic insistence, but now he won't use anything else since the flavors are so intense and delicious. Now I can't get into the kitchen bc he's taken over (not that I'm reallly complaining).
On Bean Soup: The one thing he does in his bean soup is always adds a chopped up rutabaga. I like to add a little brown sugar as well to offset any bitterness in the soup from the various ingredients.

Chicken-Vegetable Soup
Yield: 12 Cups
4 c Chicken broth
1 (28 oz.) can crushed
-tomatoes, undrained
1 (16 oz.) can diced tomatoes
-undrained
1 ( 10 oz.) can diced tomatoes
-and green chiles, undrained
1 sm Onion, chopped
3 sm Carrots, sliced
3 Celery ribs, sliced
1 Garlic clove, minced
3 To 4 cups cooked chicken
1 sm Zucchini, diced
2 ts Sugar
1/2 ts Salt
1/2 ts Pepper
4 Chicken bouillon cubes
2 tb All-purpose flour
1/4 c Water
Bring first 8 ingredients to a boil in a Dutch oven; cover, reduce
heat, and simmer 30 minutes. Stir in chicken and next 5 ingredients.
Stir together flour and 1/4 cup water until smooth. Stir in chicken
mixture, and bring to a boil. Cover, reduce heat, and simmer,
stirring often, 6 to 8 minutes or until thickened.

2 (6-oz each) chunk chicken, packed in water & undrained
4 (10-1/2 oz each) cans chicken broth
1 (15-oz) can sliced carrots, undrained
1 Tbsp dry minced onion
3 or 4 ribs of celery w/leaves, sliced thin*
1 (10-oz) jar chicken gravy
2 cups noodles*, cooked and drained
In Dutch oven or soup kettle, heat all ingredients (except noodles) to boiling;
cover pot and cook on medium for 30 to 40 minutes or until celery is tender.
After 30 or 40 minutes, stir in the cooked noodles and serve

to me, homemade chicken soup should be a good, easy comfort food, so I just add carrots, onions and celery. But I do spice it up a bit with dill weed or chives and some crushed red pepper flakes.

Carrots, celery, a green pepper for flavor, of course an onion for flavor and if you leave the skin on, it is supposed to darken up your soup broth (take it out when you're done cooking it). I once added okra to my soup, that was good too.

The basics; carrots, celery, and onion. But also for more of a healthy soup you can add garlic, Shitaki mushrooms and Nori (seaweed).

MOM'S CHICKEN SOUP:
buy a chicken
boulian chicken powder
bag of soup and greens (carrots celery)
turnips
potatoes
orzo
wash chicken put it in pot, water up to top of chicken
cook it. take gizards out.
throw in bolian powder (half jar)
throw in soup bag (celery, parsley, turnips) salads in a bag area
wash vegs first
let it all cook.
cook 3 hours on low. with carrots and all.
grated cheese
cook seperate
pepe pastina pasta (orzo)

You can add any veggie or bunch of veggies that you like. Just use your favorites as they all work to contribute to a great tasting soup. You can also add rice and pasta's too like noodles, shells, etc. Keep experimenting it will all taste very good.

Just in case you didnt know, use your own chicken stock in the soup. if you dont want to make your own you can buy it from higher end grocery stores. it is so worth it and much better than bouillon or worse yet, chicken broth. both are just pure salt!
