Do you mean those nitrogen-fixing structure thingies? Man, I've never heard of using peanut roots for anything. I mean, the "nuts" are underground, but...you mean the roots, right? Not the legumes? Peanuts have fiber, fat, antioxidants like lycopene(more in roasted nuts), and protein. But the little root thingies have nitrogen fixing cells and I don't know what you'd do with those. Good luck with that--sorry I don't know any more about the roots.
