Thanks Yetti - last year I made about four different batches of jerky and one turned out so much better than the others but I can't remember what I did differently. I'm hoping to try a bunch again this year. I didn't get to make the backstraps from last year though so I would like to surprise my fiance with a good batch.

Not jerky but if you get some small loin roasts I found a realy neat appetizer\snack to make that is easy.
Cut the venison in to about 1 inch cubes - marinate for a few hours (I use beer with some Cajun seasoning) Heat deep fat fryer to about 400. Mix bisquick and flour in equal parts in a ziplock bag and put some of the venison cubes in and shake to coat and then put them in the fryer. It only takes a few minutes for them to cook. These are really good and kind of like venison popcorn.

I have a very quick recipe for jerky...it is good and don't take a lot of work...
cut the meat into strips about 1/4 inch thick....soak the meat in a mixture of soy sauce and Worcester sauce mixed half and half (the amount you will need depends on how much meat you have) for about 15-20 minutes....the longer it soaks the stronger the flavor. You will have to experiment times to make it to your liking. You can also add some onion powder or garlic powder if you want....gives it just a little different taste...again just try some different soak times and spices in the mix....that is half the fun...trying different things. I don't think I have made it the same way twice. Then set on a dehydrator for the recommend time for jerky....every dehydrator will have different times so read the directions on the unit.
You can also sprinkle seasonings on top of the meat for some different flavors before dehydrating...I like to use a Cajun seasoning....up to you....very easy and tastes good also...

I hope you get out after the deer yourself. The hunting couples I know spend some great times together. Sorry, no jerky recipe. Back straps are easy. Fry a BUNCH of onions. Then, fry back straps- for about six people. Pile on the onions for the last few minutes for the steaks, and serve with either homemade biscuits, or corn bread, and either baked potatoes, or acorn squash.

Jerky,,,trim all fat off of meat,,cut in 1/8 inch thick strips,,,Marinate in a mixture of 3 or 4 bottles of soy sauce ,,one half bottle of Worcester sauce about 1 oz of liquid smoke and one lb of brown sugar,,,,let soak overnight,,,and put in dehydrator till done roughly 36 hours. Recipe can be adjusted to your taste. You will like it,,,I guarantee it.
Backstraps,,cut in small pieces,,dip in egg,,progresso Italian style breadcrumbs and fry in oil till brown. We make them up at Deer Camp every year this way. Goes great with a (few) beers.

good backstrap recipe- cut straps into 2 inch thick pieces then butterfly them in half. soak them in extra virgin olive oil 4 to 6 hours i soak them overnight in fridge. when i cook them i drain off the oil open them up and wipe off some of the excess oil wrap the edge with thick slice of bacon(use a toothpick to hold it on) season with a little onion powder, pepper, and season salt. in a pan cooked slow or the grill they are quite tasty. i like them with fresh onion and mushrooms too when i bring them to the ice shack. gf doesnt let me cook the mushrooms in the house loves the steaks though!
