CHICKEN BREAST WITH COCONUT SAUCE

2 tablespoons peanut or olive oil
2 tablespoons garlic, minced
3/4 cup Vidalia onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2" thickness

In a heavy bottomed skillet, sauté onions and garlic. Add chicken breasts and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the sauté).

Sauce:

3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 teaspoon oregano
1 teaspoon ground bay leaf
1/2 cup soy sauce (low sodium)
1 1/2 tablespoons sugar

In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.

To Serve:

1/2 cup canned coconut milk
1/4 cup fresh parsley, chopped

Pour coconut over chicken and allow to simmer an additional 20 minutes. Place on serving dish and ladle over with sauce. Garnish with chopped parsley.

Makes 8 Servings, 1 chicken breast per serving.

Adobo
This sauce is basic to many Filipino recipes. It can be used for fish as well as meat. Try a bit when cooking chicken.
2 1/2 lbs chicken wings and thigh
5 cloves garlic
1 bay leaf
1 tsp crushed pepper corn
1/2 cup wine vinegar
1/4 cup soy sauce
Peel and mince the garlic.
Mix the garlic, pepper corn, and wine vinegar together in a mixing bowl. Marinate the chicken for 11/2 to 2 hours. Place the chicken and the marinade in a deep pan and cook for 30 minutes at medium heat. Add 1 cup water for the chicken to cook. Add bay leaf and salt to taste. Reduce the sauce. Serve with rice.

You can use the adobo as a marinade for steak or for other meats. Simply allow the meat to marinate in it for 24 hours or so in the refrigerator.

Use either chicken or fish and grill them, every 10 minutes spread some white wine all over. Boil some fresh/frozen mixed vegetables to serve with it and some grilled potatoes. An ideal healthy but low fat recipe too! Try it and you'll see how worth it it was!!

Boil some penne rigate very al dente. Brown some sliced chicken breast (about 1/2 in. or a little thinner) in olive oil, add sliced onion and sliced sweet (not roasted) red peppers -the pickled kind in a jar. Cook until the onions are translucent, adding EVOO and a little of the pepper juice as needed. Add chicken broth, salt and pepper, paprika- enough for color. Add pasta and cook about 5 minutes until the broth thickens. The penne will be nicely flavored and the dish will be a beautiful reddish color. Add fresh or dried parsley and grated parmesan when plating. Even my kids love this! Good luck!!

Take the amount of skinless chicken breast (or tenders) that is needed for your meal, roll in your choice melted butter, margarine, or oil that has had a little garlic salt, powder, or crushed clove, salt & pepper to taste, roll in cracker crumbs, place in (spray pan coated) bake dish, and depending on amount, bake 350 for 15-30 minutes or until done. Very good & something different.

If you like spicy try this...it's called Picante Chicken...all you need besides your boneless/skinless chicken is Pace Picante sauce and some cheddar cheese(which they sell lowfat)...place the chicken in a ovenproof casserole dish or whatever and pour the salsa over the chicken until WELL covered...than bake at 350F(covered) for 45min..than uncover and sprinkle as much cheese as you want and bake until cheese is bubbly...serve with California veggies or whatever veggie/salad you like...good stuff and easy...enjoy!

wash chicken breast split in the middle stuff with veggi and cheese and bake 375 for 40 -50minutes um um good
