You can bake it like a potato - prick the skin and put it in a 175 degree oven for about 50-60 minutes.
You can steam it - cut it in rings and put it in the steamer. Just be aware that it takes a while and you need to make sure there's loads of water.
You can make a fantastic soup - cut in chunks, add same size onion, cover with water, add a stock cube for every 400ml, boil and then blend!
You can cut it into little squares and roast it in the oven till soft with olive oil, salt and thyme. When done, crumble up some feta cheese - it's fantastic!! Good Luck!

How to Cook Sweet Potatoes

Sweet potatoes were first introduced to the rest of the world when Columbus brought them over from the island of Saint Thomas. You can bake 'em, boil 'em, microwave 'em.... Just about anything you can do with a potato, you can do with a sweet potato. Below are four ways to go.
Steps:
1. Bake sweet potatoes in their jackets. Wash, cut off the ends and bake in a preheated 400 degree F oven for 40 to 60 minutes (depending on the size of the potatoes and how firm you want them to be). Bake the potatoes on a baking sheet; the sugars in the potatoes can drip out and burn on the floor of your oven.
2. Roast peeled chunks of sweet potatoes with onions in a 400 degree F oven for 40 to 60 minutes. Drizzle a little olive oil on the potatoes first.
3. Boil or steam peeled or unpeeled sweet potatoes, either cut into chunks or not, until tender. The time will vary depending on the size of the potatoes or chunks - from 5 minutes for small chunks to 30 minutes for whole potatoes.
4. Wrap peeled or unpeeled sweet potatoes loosely in plastic wrap (prick with a fork in a few places first) and microwave 10 to 15 minutes or until tender. (Use the Potato setting if your microwave has one.)
5. Mash cooked sweet potato and blend with butter and a little milk for a smooth puree. Add brown sugar plus cinnamon, cloves or ginger if you wish. A well-cooked sweet potato will mash almost instantly with just a fork.
Tips:
There are several kinds of sweet potato. You're most likely to see the light yellow, drier variety, and a darker, moister, sweeter variety, often mislabeled as a yam. You can use either variety of sweet potato, moist or dry, in recipes, but not both together, as they have different cooking times. The dry variety cooks more quickly than the moist variety.

You can bake them just like you do a regular brown potato. You can also peel the sweet potatoes, place them in a baking dish, add butter, cinnamon or brown sugar, and honey. Cover and cook at 400 deg. for 40 min., then, uncover and continue cooking for another 10-15 minutes or until golden brown.

An all time Thanksgiving treat.
Candied Yams (sweet potatoes)
Boil sweet potato in water with skin on until tender but not mushy. remove from water and let cool. Peal & slice into baking dish. Add butter, salt & brown sugar. (If only making one, use about 2 teaspoons butter and 1 Tablespoon Brown sugar pinch salt) Cover and pop in oven until the butter & sugar begins to bubble. Throw on a handful of mini marshmallows and continue to cook until toasted and a bit melted...enjoy!
Another yummy treat is to boil them, mash with a little cream, butter, brown sugar, pinch of cinnamin. put in baking dish and top with chopped pecans mixed with a little butter, flour, sugar (like a crumb topping) Pop in oven until topping is toasted and potatoes are nice an hot. Sinfully delicious!

Rub the sweet potato with olive oil and bake it like a white potato. It will be very sweet. Then add butter or more olive oil and some salt and pepper.

Take 1 lrg SP, 3 lrg carrots chop into bitesize chunks, fry in a little olive oil sprinkle on some ground coriander fry off about 5 mins. Add aprox pint and half boiling water, veg stock cube, salt and pepper, bring to boil and simmer till tender. Zap with electric hand blender (take care when doing this) Pour into a bowl and add drop of cream and some fresh parsley (if wished). DELICIOUS!!! (My own recipe)

Anything you can do with an 'ordinary' potato can be done just as well with a sweet potato. Boiled, mashed, sauteed, chipped, home-made crisps, potato-salad etc.
