A good way to re-invent cheese is to change the way you eat it. Try these great combos:
Gorgonzola and pears.
Breaded and baked camembert.
Haloumi cheese fried and served in a pitta with fresh tomatoes.
Toss Feta in egg and flour and fry to make it crispy served with a greek salad.
A friend of mine uses an apple corer to take chunks out of an apple and then stuffs the gaps with Stilton and eats it like a normal apple. Yummy.
Port Salut is a lovely buttery cheese - but I always eat it on it's own - or with a glass of wine!

So many good cheeses, see if you can find Double Gloucester (fantastic..if you like sharp cheddars), Manchego is interesting.
Edam and Gouda are great for fondue. It's a acquired taste, but Stilton or Maytag Blue Cheese can be fantastic with wine and even more spectacular in salad. (in the crumbly cheese category like Feta) Substitute Cream Havarti for American or Muenster on your sandwich, you'll be pleasantly surprised, it has a very creamy texture and tangy taste. There isn't much better than Gruyere for Mac and Cheese...

Have you tried moving away from the cows milk cheeses and tried goats or ewes milk cheese? They tend to be a bit stronger than a lot of cows milk cheeses. They also come in soft and hard varieties.

Try Cambazola - a rich creamy blue cheese - its lovely and not at all smelly or fierce. Have you ever tried Crowdie? Thats a specialised cream cheese made in the Highlands of Scotland and not many people know about it. Also try specialist shops Good luck, I am interested in your other answers too so thanks.

As above, but I usually try and have a little goat cheese in the 'fridge. Kinda tangy, different flavor and good on a sandwich or in salads.

A real challenge for you then is Limburger. Get a brick of Limburger, and a loaf of black pumpernickel bread and a large mild onion and an apple. Put a slice of Limburger on a piece of pumpernickel, add a slice of onion and apple and you are in business. It is really great! The trick is to get it past your nose first!!

Depends how strong you like your cheeses. I love strong cheese and the best of the best is PONT LE VEC. Its a brie, it stinks but it tastes wonderful. You might have to search for it!
