My very first job when I was 16 was waitress in a donut shop (isn't that a song?) When it was slow in the shop I'd fill the jelly donuts. Really fun! A big vat of jelly with 2 stainless steel tubes, one donut in each hand. Hard to get the technique down so the jelly went all the way thru tho! The jelly was seedless razberry jam or jelly. It had some other ingredients in it too, but the supplier always brought these huge containers of only red razberry jelly for donuts.

I think in a regular jelly doughnut they use raspberry jam but they can be made with any flavor.

JAm would be interesting to try

Jelly is probably what they use and it's probably a special jelly.
