Banana Creamed Fruit - serves 4

1 egg white
1 large banana, mashed
1 tsp lemon juice
1 tbsp icing sugar
2 cups sliced fresh fruit (peaches, berries or other)

In small bowl, beat egg white until foamy. Add banana, lemon juice and icing sugar. Beat until mixture forms stiff peaks.
Spoon fruit into individual dishes and top with cream.

Directions:

Pulse in a food processor, or pass though a food mill fitted with the medium disk. Add formula, breast milk, or boiled and cooled water as needed. Fill 1/4-cup plastic containers or ice-cube trays with purée.

Try making some Gingerbread.
2 1/3 cups of all purpose flour, 1/2 cup of shortening, 1/3 cup of sugar, 1cup of molasses, 3/4 cup of hot water, 1 teaspoon baking soda, 1 teaspoon of ground ginger, 1 teaspoon ground cinnamon, 3/4 teaspoon salt, 1 large egg. (Note) do not use self rising flour. Also bake for 45 to 55 mintues or until toothpick comes out clean.

Crispy Rice Treats
INGREDIENTS:
4 cups crispy brown rice cereal
1 cup brown rice syrup
2/3 cup peanut butter (or try almond, cashew, even hazelnut)
healthy dash of umeboshi vinegar
healthy dash of vanilla
optional: cinnamon, nutmeg, raisins, roasted almonds, peanuts or cashews
PREPARATION:
1. Over medium flame, heat up brown rice syrup and peanut butter, vinegar and vanilla, stirring constantly until the mixture is smooth, thinned out and bubbling a little.
2. Pour onto crispy rice cereal in a large bowl and blend well with a wooden spoon.
3. Pour into a pyrex dish (or other pan) and flatten with a wet spatula.
4. Let cool. Slice and serve.
Serves 8


Banana Mango Smoothie
INGREDIENTS:
2 frozen, ripe bananas
1 mango, peeled and sliced
10 ounces calcium fortified orange juice
1 cup low fat or fat free vanilla or mandarin orange yogurt
PREPARATION:
Cut banana into chunks. In a blender, combine all ingredients and blend until smooth. If the smoothie is too thick, thin with a little more orange juice. Pour into 4 glasses.

Healthy Cookies For Kids
Ingredients:
1 large banana
1/2 cup butter
3/4 cup brown sugar
1 cup of oatmeal
1/2 cup white flour
3/4 cup wholewheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup macadamia nuts
1 apple
Directions:
Mash banana and mix with butter and brown sugar. In separate bowl mix dry ingredients and then mix them together. Add the nuts and apples last.
Spoon onto greased cookie sheet and bake in oven at 325 degrees for 20 minutes or until golden brown. A wonderful afternoon snack served with a glass of milk or juice.


Fresh Strawberry Fool
Layer strawberries or blueberries with a mixture of whipped cream and lemon yogurt and top with granola for a dessert kids will love.


Frosty Fruit Smoothie
Here's a kid-pleasing snack that's especially rich in vitamin C.
Ingredients
1 medium banana, peeled and cut into chunks
1 cup orange, pineapple, grape, apple, or cranberry juice, chilled
1/2 cup fat-free milk
1 teaspoon vanilla
3 ice cubes

1. In a blender container combine the banana chunks, chilled fruit juice, milk, vanilla, and ice cubes. Cover and blend until frothy. Pour mixture into glasses. Serve immediately. Makes 2 servings.

I'm afraid it may not be healthy, but my kids love this! It sounds absolutely disgusting, but it is a real delicious and so fun to make with kids!

Kitty Litter Cake

CAKE INGREDIENTS:
1 box spice or German chocolate cake mix
1 box of white cake mix
1 package white sandwich cookies
1 large package vanilla instant pudding mix
A few drops green food coloring
12 small Tootsie Rolls or equivalent

SERVING "DISHES AND UTENSILS"
1 NEW cat-litter box
1 NEW cat-litter box liner
1 NEW pooper scooper

1) Prepare and bake cake mixes, according to directions, in any size pan. Prepare pudding and chill. Crumble cookies in small batches in blender or food processor. Add a few drops of green food coloring to 1 cup of cookie crumbs. Mix with a fork or shake in a jar. Set aside.

2) When cakes are at room temperature, crumble them into a large bowl. Toss with half of the remaining cookie crumbs and enough pudding to make the mixture moist but not soggy. Place liner in litter box and pour in mixture.

3) Unwrap 3 Tootsie Rolls and heat in a microwave until soft and pliable. Shape
the blunt ends into slightly curved points. Repeat with three more rolls. Bury the rolls decoratively in the cake mixture. Sprinkle remaining white cookie crumbs over the mixture, then scatter green crumbs lightly over top.

4) Heat 5 more Tootsie Rolls until almost melted. Scrape them on top of the cake and sprinkle with crumbs from the litter box. Heat the remaining Tootsie Roll until pliable and hang it over the edge of the box. Place box on a sheet of newspaper and serve with scooper.

Baked apples would be another suggestion, along with apple slices with jelly, peanut butter or caramel dip.

Kids' Trail Mix made out of Cheerios, mini-marshmallows, peanuts, M&M candies and raisins.
