He asks so many questions and is such a good listener and wants to learn all about me. But sometimes I feel like I said a little more then I wished I had on some personal subjects... Any idea how to be open and keep my private side?

Actually its really a normal thing for a guy to do if he is really interested. You can be open but it doesnt mean you have to really tell everything. I have learned on thing from the movie "titanic" when rose mentioned " a woman's heart is like a deep ocean" it meant that we women have lots of things kept in our heart that only us knows.
So its all up to you what you wanna share or not.

give small answers like "yeah kinda" "no not really" and don't really go into detail.. it will take some practice though cause im just like you when people ask me a question i go sooo much into detail and end up saying bits of business i didn't want another soul to know, its just natural for me. but ive learnt to calm down abit. but if that don't work ask him more questions about himself, but not 2 many. and if he says something thats you've been through but you've never shared, just cause hes been through it doesn't give you the que to start blurting out your business just learn to listen and keep your answers to a minimum.. trust me :)

Always keep a little something in reserve. Make him wonder what you're thinking sometimnes.

You will have to condition yourself to doing this. Think in sentences rather than paragraphs.

DON'T GIVE HIM, SO MUCH TIME, TO ASK -YOU- QUESTIONS . TURN IT A ROUND ON HIM . LET HIM DO THE ANSWERING FOR A WHILE .
