Fun! 8 yrs old is a great age! They love to do everything! For an 8yr old girl I'd figure on Barbies,playing cards,board games,DANCING,painting fingernails,building a fort with couch cushions,etc. Just remember what you liked to do when you were her age...and enjoy yourself!
I have to say, I'm impressed that you want to entertain her and INTERACT with her instead of camping her in front of the boob tube! If I were the parents, I'd pay you extra for that! :) Save the movie for bedtime.

Hi, I would print out some coloring pictures from the computer, 8 year olds are young enough to appreciate it and old enough to actually color in the lines. Print out pics of princess's like cinderella, to do this just google coloring pages cinderella. make sure the picture is big enough though Next, 8:25 is the standard time for all babysitters, you tell them 8 and then they say but please and you say fine for 20 more minutes and they think they won =) Dont ask a child if they want a bedtime story, any kid will try to avoid sleep by saying anything, ask the parents what they do as a routine before they leave: Do i read to her? Does she have a toy she likes to sleep with? Cracked door? They will probably tell you all you need to know being that its their kid and they know how to get her to bed. 8 year olds want to feel smart so ask questions, "hard" questions but also fun like: hey (name) can you help me, i am thinking and i dont know who is the prettiest princess in the world, do you know? Why? wow your soooo right! blah blah blah.... and so on.. This will make them feel like theyre contributing. No one, not even you, is too old for a game of hide and seek. =) Play toys with her, at that age girls usually have barbies they will probably pay you before you leave, unless you made it unclear that it is a babysitting JOB and you werent just hanging out over there. Most likely they will pay you.

Don't tie the kid down to a specific activity. Introduce ideas that will fire up their imaginations. From there, sometimes the simpliest of things can make for hours of fun for the kid. Build a fort, make a cardboad box house, have a tea party, bake some real cookies...use your imagination too!

do each others finger and toe nails. make sure each coat dry before the next so neither of you can do anything until then, sound mean but she'll actually enjoy it! then try doing her hair in funny styles and let her do the same to yours. remember with the nail polish it may have to come off for school so don't use any bright colours that will stain her nails, go for light pinks and even light blues.! Have fun, 8's great!

Bake cookies with her. Curl her hair. Paint fingernails, if alright with her mom. Take her to a kids movie or bring one with you. Make dinner together. Have a tea party. (Tea, milk, sugar, cookies) You can dress up with her and pretend you are at the palace having tea with the queen. Pinkies up. Bring a jewelery making project. Anything you wish you had done or enjoyed doing as a kid.

watch a nice video together, get one of those classic kid movies, these days kids dont see those and my nephew totally flipped for the flying car in 'chitty chitty bang bang' and this is a kid born in the year 1999. you can do puzzles, my niece loves them, her mom frames the nicest ones, you can read together, you can bake together (simple cookies is always fun, let her do the mixing etc.), you can do crafts like paper crowns/paper flowers/funny shapes. you can make play dough with white flour, water and salt (so it doesnt rot, in case she wants to keep it), make shapes and toys with this dough, bake it, cool it and paint it. oh ya you can paint together, finger painting, cut half a potato, dunk it in paint and use that as a block, it gives a nice texture. I cant wait for my 9 month old daughter to be old enough, I am dying to do all this with her. One more - all time favorite, play house with her dolls, girls seem to love that.

Some girlie movies, making beaded jewellery or scrap booking, girls love crafty things. Do her hair or let her do yours, I think you will find that most eight year olds know what they like and are alot of fun. You might even find that she entertains you...enjoy your evening and getting to know your niece.

i would play board games, watch TV, read watch movies or even go to the movie theater. Maybe if you can let her invite a friend over. Ghost stories.

All I can say is that I knew my nieces and nephews so I knew what they liked to do and when it came my time to babysit them I was fully aware of what they enjoyed. All I can tell you is to ask the child herself.
