Make sure you buy the bar that is in the same location as the chips, it will say baking chocolate. Just as long as you aren't getting an actual candy bar, it won't spread because the oil content in the baking chocolate (usually a belgium type) has more oil in it so it also won't taste "fake".

Yes and No.
Yes, you can certainly replace chocolate chips with chocolate chunks. As many have pointed out, the original Toll House cookies were made with chunks not chips.
No in the sense that the texture of chocolate chips and baking chocolate is not the same. Chocolate chips are made with a higher ratio of cocoa solids (powder) to cocoa butter than chocolate made for eating (not "because the oil content in the baking chocolate (usually a belgium type) has more oil in it so it also won't taste "fake"" as was answered earlier") and that is the reason that chocolate chips hold their shape through the baking process.
Chocolate chips are also uniform in size where chunks are not, which affects the look of the cookie as much as anything else.
Because chunks of semi-sweet cooking or baking chocolate will not be uniform in size, the smaller pieces will melt more quickly and can spread throughout the cookie while larger pieces are more likely to retain something akin to their original shape.
Whatever you do, do not grate the chocolate into fine shavings (as was also answered earlier), the shavings will be far too fine and will melt completely and spread throughout the cookie more or less evenly during baking. Use a chocolate chipper or a knife and aim for chunks that are more or less the same size for the best results.

You can definitely use chopped chocolate, in fact the original nestle toll-house cookies were made with chopped chocolate- the chips came later! Just make sure your chopped chocolate pieces are at least the size of mini chocolate chips- otherwise they will melt some- still delicious though! And you can use more chocolate then called for just remember that it will make the dough a little dryer so you may have to use your hands to form the cookies! Guess I assumed you are making chocolate chip cookies- but the advice works for anything a chocolate chip may be called for! Good Luck and Good Eating!!!!

chocolate chunks are better tasting than chips, so go for it. To big of chunks, and it wont melt at all, and too small and it just gets weird on you. The chocolate has more of that great melting warm effect, which is best tested by eating lots and lots of cookies. basically, cookies are great.

chopped chocolate will be fine just like chocolate chips. Chopped Easter bunnies or santa make great cookies. chopped toffee candy bars make an excellent cookie too.

You can replace chocolate chips with chocolate chunks or chocolate flakes or chocolate kabobs but I think the chips would result in something that looks like tiny choc chips cookie.

You can definitely use chocolate that is cut up --- it will probably taste better too since chocolate that you buy to eat is usually of a higher quality than the chocolate chips they sell for baking.
It will not disappear into your batter don't worry.

As long as it is not chopped too fine it will work out ok. Just make sure you use the same amount of chocolate as the recipe calls for.
