Corned Beef Hash
Serving Size : 6

1/2 stick Unsalted butter
2 cups Small-diced yellow onions
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 tablespoon Chopped garlic
1-1/2 pounds Corned beef, chopped
1-1/2 pounds Idaho potatoes, peeled, small diced, and blanched

Preheat the oven to 400ºF.

In a large oven-proof skillet, over medium-high heat, melt the butter. Add the onions. Season with salt and pepper. Saute until golden, about 4 minutes. Add the garlic and corned beef. Continue to saute for 2 minutes. Add the potatoes. Season with salt and pepper. Continue to cook for 4 minutes. Remove from the heat.

Using the back of a large spoon or spatula, pack the mixture firmly into the pan. Place the pan in the oven. Cook for 8-10 minutes or until golden brown. Remove from the oven and slice into individual servings.

WOW, way too many people into buying frozen foods that don't have the taste of fresh, just too lazy to learn how to cook!
After you have grated your potatoes and added the egg and spices, mix well, drain in a collander, then squeeze some more in paper towels. Fry in "lightly" oiled or buttered pan at med. high heat turning as it browns. ENJOY!

My husband uses the frozen kind. He starts with safflower oil and a large teflon frying pan. He uses a large pot lid on top of the hashbrown pile to help cook them all the way through. It takes a while to get them nice and golden brown so try to be patient.

if they are soggy, you are frying them in to much oil. Try cutting back the amount of oil that you put on The potatoes when you fry them. Just use a very small amount, fry on one side for a few mins, then flip them over and do the other side, if you want all of them crispy, scatter them in the pan...

I know I know! The night before or earlier in the day, bake (not boil) a few white potatoes probably 1 large one per person. Cool & put them in the frig. they need to be cold. When you are ready grate them, salt & pepper them, put them in an iron skillet with a little oil. brown them on med., flip them and brown the other side! They don't fall apart and your gonna love them!!! I do it all the time, usually when we have baked potatoes I bake several extras for hash browns. They will keep a couple days in the frig. till your ready to grate them.

You must go to the super market and buy them in a bag found in the frozen food section. Follow the directions on bag and you will have a tasty side dish for everyone to enjoy.
