bake them. if you do it right they come out excellent. just cut into wedges and don't bake too hot. check allrecipes.com for some ideas. if you want to deep fry just use a healthy cooking oil. the unhealthy part of fries comes from the type of oil used. many fast food restaraunts use animal fat in their cooking oil which is full of cholesterol. but if you use a natural, organic vegetable oil there are no ill effects. corn oil, palm oil, and peanut oil are all excellent. go to an organic grocery store, trader joe's, or even some supermarkets.

You can bake them. I like to put Cajun seasoning into a zip lock bag, add the fries, shake. Line a baking pan with foil, shiny side up, and bake at about 400-425 until brown. Best if skins are left on, as far as taste to me.

Season and bake. My children even love the baked potato chips I make. It is a lot of work but so much better for their health.

Bake them for half of the time and broil them for the rest of the time so that they cook well on the top also. Put salt on them when you start to broil them.

Bake them. But baking makes them bland, even though it is healthier. So season well.
