Some spices and common uses are:
Epazote (Wormseed) Used to cook beans and for some soups
Cilantro (Coriander) Used in salsa
Perejil (Parsley) Used in salsas
Oregano (Mexican oregano) Used in Pozole
Chile de arbol
Chile ancho
Chile pasilla
Chile chipotle (dried chillies in all varieties) All chillies are used either for salsas or stews
Comino (Cumin) For soups and some stews
Hoja Santa (no translation) Used in some tamales recipes
Hierbabuena (Spearmint) Used in chicken soup
And others I cant recall now...
