The taste of french fries depends upon the oil used in cooking. (Mcdonald's used to use 7% Cottonseed Oil with 93% Beef Tallow before switching to pure Vegetable Oil.) I use Canola or Vegetable Oil for deep frying.

the best oil to fry in hands down is peanut oil. Canola has that after taste you are talking about, and "vegetable oil" is really soybean oil, no matter what brand you get, and that has a wierd taste too for frying. Trust me when I tell you from experience, the best frying oils are ranked:
1. Lard, yep old fashioned animal fat, tastes super but don't eat a bunch
2. Peanut Oil, much better for you, but lard tastes sooooo good.

Everyone loves French fries that is for sure....
I use "Peanut oil" it can be used for high cooking temperatures.
first I soak the potatoes in ice water. After they have chilled They are dried on a terry towel and then added to the hot oil..I set the heat on the stove to the third notch...electric then when they are really starting to get a tinge of color I reduce the heat to medium. the pan usually conducts the heat so this temp will continue cooking them without burning... Depending on the type of potato they will take different cooking times.....I use russets or Idahos....they are the best!
After the potatoes are cooked I place them on paper towels and salt them right away. and after the oil has cooled off I strain it and use it again....I buy Luanna peanut oil at Walmart in the large size. It's very reasonable....

Wesson Vegetable Oil. Buy it on sale just to try it, you'll probably like it. The only oil I've ever fried with that doesn't leave a strange after-taste.
