A good quality Bologna is made from chicken, turkey, beef or pork. The meat is ground extra-extra-fine with spices then added to it, then smoked.

Despite what most people think, the meat used is a high quality. People confuse Bologna with the word baloney. As such, there is the mistaken assumption that Bologna is of inferior quality. See:

"Bologna sausage is commonly believed to be created from lowly scraps of meat cuts. It is assumed that this food, therefore, is the origin of the slang word baloney, meaning "nonsense" or "BS". However, the origin of the word "Baloney" is a corruption, through the French, of the city of Bologna, Italy. I think baloney is what we call Devon down under if I am right then its made out the same thing as Frankfurt's (hot dogs)are lips bums and hoofs.
