I had soup and bread! My dad made it and he's an awesome cook - especially when it comes to homemade soups!
Maybe you could have something small like half a sandwich and a side salad. Eating light at nighttime works better on your body anyway.
Happy eating to you too! :)

This is what I am having for dinner

Pumpkin Pancakes:
1 cup buttermilk pancake mix
1 cup cold water
1/3 cup canned pumpkin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Nonstick vegetable cooking spray
Butter, room temperature

Pancake Preparation:
In a medium bowl, whisk pancake mix, water, pumpkin, cinnamon, and ginger until just blended (do not over mix; mixture should be lumpy).

Spray a heavy griddle with nonstick spray and heat griddle over medium heat. Spoon 2 tablespoons of batter onto griddle to form each pancake. Cook for 2 minutes or until bubbles appear, then turn pancakes over and cook for 2 minutes longer. Transfer pancakes to plates. Top with butter and serve with warm syrup.

If I am alone, I normally cook a bag of instant noodles. Boil water in a pot and add some vegi, an egg or some meat/ham if you like, it can be done less than 5 mins, very fast and easy to clean up too.

go to the freezer isle in the grocery store and pick up a bag of frozen Green Giant veggies that you just pop in the microwave with cheese sauce then grab some tyson chicken strips to season with ranch dressing mix (the dry powder that you find on cooking isles when making your own dressing), pop those in the oven and if you want, you can even grab those pillsbury biscuits that cook in the oven too. its all very simple and verrryy tasty.

if you want a very simple and healthy lunch, get those veggies i first mentioned and grab some cottage cheese to go on the side.

I'm slack like that. Probably make a bit of salad. Last week I went all out and made shepards pie and froze the leftovers so that another day when I couldn't be bothered I could just micro that.

Pasta tonight for me (and my bf)
Quick..small meals..hmmmm........we have flautas and burritos that you can just put in the microwave for a few minutes and nuke. Taste really good. The flautas are better in the oven, but take longer.

Pot Stickers from Ling Ling (thats the company name) are realllllly good too. Boil them in water for 8 minutes and voila! they are done!

Hope that helps a bit!

Make a nummy salad with grilled chicken on it..
Grill up a couple of boneless chicken tenders...it takes literally minutes to pan fry them and put them on a bed of lettuce and you are good to go!
