Actually, I have been doing this for a year now. I have lost 15 pounds, but my upper body is more muscular. I would now like to gain more muscle faster, but I'm afraid that if I stop riding the bike I will gain unwanted weight. Any suggestion on what to do and how to do it? Also, what would be a good diet to gain muscle but not fat? How many calories, fat grams, protein grams should I be consuming?

Cut the bike riding back to only an hour on the days you don't lift. Make sure that you are working a different muscle group each day if you are lifting every day. Legs one day, back the next, shoulders and arms the next, etc. You may even want to try working the legs 2 times a week. As for calories, fat, protein, carbs, etc. that all depends on your current weight, but if you are in good physical shape now, you would be good to stay at 2500 calories or higher due to your activity level. Try to keep it on a 40/30/30 balance (40% protein/30% carbs/30%fat) of your daily intake. Try keeping protein at 1g per pound of body weight and carbs at 1/2 gram to 3/4 gram per pound of body weight. Good luck!
