Flour on your knife is a no-no. Although it probably won't stick, and will leave a flour residue on your cheese, your knife could also slip, especially if there is any flour on your hands. Serious cuts can happen.
It could be a few things - your knife may be to big, and trapping moisture on the way through, or your cheese could be too warm. If you are cutting cheese for cooking, use either a grater or a slicer that allows the cheese to be separated from the block as it is shaved. If you are cutting cheese for a decorative display, use one of the many paring-type tools. If you are slicing it to go with crackers, chill your cheese before slicing with a smaller knife.
Good Luck!

Okay Chef
get a bain-marie fill it 3/4 full of very hot water
place it next to your clean cutting board with a clean rag
place the blade into the very hot water and let it rest for about 45 seconds.
Pull the knife out of the very hot water and with the clean rag remove any water that is on the blade.
Now cut your cheese.
It is all ways easier to cut cheese with a warm blade.
Please tell me how you are going to get all the flour off all the cheese that you cut.

I don't see how that would work. The flour has no way to stick to the knife....plus, if you got any residue flour on the cheese, that would make it look moldy-possibly. I would think that heating the knife would be better..Putting it under super hot water and wipe dry?

you should probably use a cheese knife, the one with the holes on it. they are there so that air can pass through and the knife does not stick.
