I've moved from lower AL to north TX. My cornbread recipe isn't working here. What can I add to make my cornbread rise (like cake) as it did in Alabama? I don't know if it's because I now have electric oven (how I miss my gas oven) or is this an altitude problem.

I live in Texas and I still use my grandmother's recipe for cornbread.....so moist I could eat the whole recipe!!!!
2 cups buttermilk
11/2 cups cornmeal
3 tablespoons flour
1 tsp. salt
1 tsp. soda
1 egg
2 Tablesppons of oil
Bake at 400 degrees be sure to spray Pam in container before baking

It is all in the altitude. It would not have anything to do with the oven. I'm not sure what diffenence you'd need to make it better since I am from MS, but I know the cooking time would change as well. I would try a self rising flour instead of all-purpose and baking powder if you are not already doing it. You best bet would probably be to ask someone around there, or go to a food website like: www.foodtv.com or to a local cookbook and try to look at different baking recipes from that area. I know that when I went from north MS where there is a lot of hills to the Delta of MS where there is nothing but flatland, the cooking time made all the difference. I couldn't even boil an egg the same way I did there. Just make sure that the consistency is like cake batter when you put it in the pan, or you will not get any results.

This is what I do to my cakes also it's something about the eggs temperature that changes everything. Take how many eggs out that you are going to use and let them sit at room temperature for a day and then use them the next eveytime I do this when I cook a cake or cornbread it rises and it's not flat makes them look more presentable :)

More than likely it is a humidity problem. AL is very humid, while Texas is pretty arid. What is your recipe for cornbread? If you print it - I may be able to help you out. I live in North Texas.

Make sure the baking powder hasn't gone bad.
Remake the recipe using beer for the liquid and a new baking powder.
