So I'm having this woman over on saturday night to watch a movie, and first i'm cooking dinner. I've suggested salmon, and she's down...I've made it before, its very easy and tasty, but what should i serve with it? i've previously made parsely rice, but thats kinda boring...I'm open to any suggestions

Ashley W, I cook salmon all the time...if you think its hard, then you've never broiled salmon before

Here is the rest of your menu slick

go with grilled vegetables
zucchini,squash, roasted red peppers,egg plant and use seven sea Italian dressing
cut every thing the same size so they with all cook in the same time. place the vegetables in a bowl pour the dressing over cover place in refer for about 2 hours
strain place vegetables on pan and broil in oven about 12 minutes

starch
go with mixed color duchesse potatoes
you will need some sweet potatoes and some Idaho potatoes
cook the potatoe add your egg and butter and place the sweet potatoes on one side of the bag and the white potatoes on the other side and then pipe them on to a pan and place in oven and cook until edges on light brown
don't use any SPINACH in any thing

maybe for apps
a cajun shrimp kabob
or maybe some duck pate and don't forget you need port wine if you get the pate

dessert
zabaglione with berries
this is ez and eye mean ez
egg yolks 5
sugar 3.5 oz
Marsala wine 4 oz

put every thing in to a metal bowl
place the metal bowl over the pot of simmering water and WHISK AND WI SK AND WISH UNTIL THICKENS this will take a while

place berries in a tall glass and pour zabaglione on top more berries more mixture
BUT DO NOT USE ALL OF THE MIXTURE
you might want to save a little for after dessert lol

I love salmon. It's wonderful so long as it's not overcooked. Which really does mean you have to cook it yourself, since restaurants almost always overcook fish.

I think steamed asparagus would be beautiful with salmon, and maybe some sweet Mandarin oranges. Or, the Japanese souse spinach in a mixture of dashi (fish stock), soy sauce, sesame seed and mirin seasoning. I've even had it with a little bit of peanut butter in the sauce. You could probably do something similar even if you don't have all authentic ingredients just by seasoning to taste. If you want a starch that isn't boring but not too strong that it would compete with the fish, you might try a baked yam with a little bit of brown sugar sprinkled on the top. Or, make a bed of pearl pasta for the fish. It'll suck up any run off juices to add flavor to the pasta and it's just plain fun.

How about Baby Bockchoy, sauteed in Garlic Butter, shredded fresh ginger and a dash of Lime? It is an excellent side that is mild enough not to overpower the salmon, yet the lime adds a zing. Sprinkle a dash of coars salt and a bit of freshly cracked black peper. It will take a maximum of 4 minutes once the butter, garlic, and ginger have bubbled (but not browned).

Another side on the plate that is fast and great is yams or sweet potatoes with a dash of butter and maple syrup. They cook quickly, and you can mash the butter and maple syrup in quickly - no milk necessary.

All easy - all superb!

You will have some wonderful colours, too - the pinkish salmon, brilliant green baby bock and the amber sweet potatoes!

No one seems to get the idea that you just want the side items, not how to cook the salmon...lol. Besides, they would be surprised how good thousand island as a fish marinade can be...lol.

Okay, my suggestions for the sides. One thing that my husband and I always make with our fish is just a simple pasta. We get rotini or shells, and boil them in water with a little salt until soft. Then pour the pasta into a strainer. Melt some butter in the bottom of the pot and pour some Garlic Salt into the bottom the pan. But the pasta back in and put the lid on and shake it until the pasta is covered in the butter and Garlic Salt. It's really good. And simple too.

I would also try candied carrots if either of you like carrots at all. I don't like carrots but I do like candied carrots, they are good. I don't really know how to cook them though, but you could find that else where pretty easy though.

Another would just be simply rice with gravy instead of parsely, or even lemon. I've seen recipes with a little bit of shredded lemon rind in the rice and it's really good and looks very pretty. Of course, you could just squeeze the lemon on the rice and put a parsely leaf on top for show.

Try this one....Wrap your salmon in aluminum foil with garlic butter, a tad bit of salt, a little lemon, other seasonings of your choice, and fill with a mixed veggies, and small potatoes. Let it cook either in a grill or your oven until the veggies are done. Fish does not take very long to cook. By wrapping it in the foil, you seal in the flavors and there will be NO pan to WASH! I guarantee you she will love it! Everything you will need for you meal will all be contained inside the foil with the fish too! You can serve dinner rolls with it too if you want. For dessert...try this one....It is called a dump cake. Put two cans of either peaches or pineapples in the bottom of a cake pan, pour a yellow cake mix (dry) over the top of the fruit, put pats of butter all over the top, bake until golden brown...then serve! It is easy, sweet, and goes great with everything! It will be done the same time the salmon is ready if you bake them together.

Ok, here's a few ideas:

-Broiled salmon w/ dill butter: Season the salmon lightly w/ sea salt & fresh cracked pepper, broil the salmon until done. Top the salmon with a pat of dill butter. (How to make dill butter: Take a few sprigs of fresh dill, chop it up finely, mix it in with a stick of room temp. butter. Place the dill butter in the fridge to solidify. Cut it into pcs. and use when your salmon is finished cooking. If you don't like dill weed, other fresh herbs can be used. You can serve roasted red potatoes & sauteed green beans with this.

-Teriyaki Salmon: Broil or pan broil salmon steaks with Teriyaki sauce. Make sure you don't let it get burned because the sauce has a high sugar content. Serve with white rice & grilled asparagus.

-Smoked Salmon with Bow-Tie Pasta: Boil up some bow tie pasta (or your fav. pasta) Take a pc. of smoked salmon and "flake" it up (or cut into small pcs.). In a pan, saute some chopped shallots, garlic, in butter. Add a splash of white wine. Then, add in the smoked salmon some frozen peas. Heat everything up then add in a bit of heavy cream & a little fresh dill, sea salt & fresh cracked pepper. Serve this sauce over the hot pasta. Serve with fresh hot garlic bread, a mixed green salad & a nice glass of Pinot Grigio wine. Enjoy.

Thousand island dressing is too cheap. You may cook mushroom, onion and red wine sauce and pour it over the salmon. It's more like high-class restaurant style.
You may serve sweet corns and mashed potato as side dishes. It's colorful.

Salmon, my favorite fish, goes with a lot of sides. My suggestion to you would be au gratin or mashed potatoes, and a vegetable of either your or her liking. That way three food groups are represented, and it will make an excellent presentation. By the way, au gratin or mashed potatoes are very tasty from a box, so you shouldn't have any trouble with preparation.

Salmon Steak with Wine Sauce
Servings: 1

1 (4 oz) Salmon Steak, thawed if frozen
1 t Canola Oil
1-1/2 Tsp Butter Or Margarine
1/4 t Cornstarch
1 Tsp White Pepper
1/4 c Half & Half Light Cream
1 ea Large Beaten Egg Yolk
1 T Dry White Wine

Preheat a 6-1/2-inch microwave browning dish at 100% power for 3 minutes. Add oil to the browning dish; swirl to coat the dish.

Place the salmon steak in the browning dish. Micro-cook, covered, at 100% power for 30 seconds. Turn the salmon steak and micro-cook, covered at 50% power for 1 to 1-1/2 minutes or until the salmon flakes easily when tested with a fork. Let the salmon steak stand, covered, while preparing the wine sauce.

For wine sauce: In a 2-cup measure micro-cook the butter, uncovered, at 100% power for 30-45 seconds or until melted.

Stir in the cornstarch and white pepper. Stir in light cream. Micro-cook, uncovered, at 100% power for 1-2 minutes or till the cream mixture is thickened and bubbly, stirring once.

Stir HALF of the hot cream mixture into the beaten egg yolk. Return all to the 2-cup measure. Micro-cook, uncovered, at 50% of power for 30 seconds, stirring once. Stir until mixture is smooth. Stir in dry white wine.

Transfer the salmon steak to a dinner plate. Spoon the wine sauce atop. Serve with mixed vegetbales or a salad.

8 servings

1 can whole corn, drained
1 can creamed corn
1 box Jiffy corn muffin mix
1/2 cup butter, melted
1 egg
8 ounces sour cream

Preheat the oven to 350ºF

Mix all ingredients together and put in 2 quart baking dish.

Bake for one hour.

INGREDIENTS:
1 cup mayonnaise
6 cloves garlic, peeled and minced
3/4 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese
1 tablespoon half-and-half
1/4 teaspoon paprika
1 (1 pound) loaf French bread, halved lengthwise

DIRECTIONS:
Preheat grill for medium heat.

In a medium bowl, mix the mayonnaise, garlic, and Parmesan cheese. In a saucepan over medium-low heat, mix the Cheddar cheese, half-and-half, and paprika. Stir constantly until melted and smooth. Pour into the bowl with mayonnaise mixture, stirring until well blended.

Place the French bread on the grill cut side down, and let it toast for a few minutes. Remove from the grill, and spread the cheese mixture on each side. Place the halves back together, and wrap the loaf in aluminum foil. Return to the grill for about 15 minutes, turning occasionally, until the loaf is heated through and the cheese mixture is hot.

Not thousand island. Use a good salmon rub mixed with a bit of teriyaki sauce. Then steam brocoli, cauliflower, carrots & both green & red peppers together.
