I have a package of bacon to cook. I'm looking for ideas for supper besides the traditional : bacon, eggs and hashbrowns/toast or pancakes, OR BLT sandwich. Any unique delicious ideas out there??

this is unique, and in my opinion, YUM. hard boil 4-5 eggs, cool, then peel. fry up your bacon after cutting the package in 3rds. (each strip would be in 3 pieces) make it kind of crispy. in a medium sauce pan heat up 1 large or 2 small cans of spinach, chopped hard boiled eggs, then add the bacon with just a little bit of the drippings. add vinegar to taste (i like mine a little tangy) serve with boiled red potatoes with the skins left on, and it's a lovely meal. curiously delicious. enjoy!

Baked Potato Boats.

Baked potatoes - cut in half and scoop out insides leaving rim with the peel (save this). Mix potatoes with shredded cheddar cheese, crumbled fried bacon, small amount of chopped onion and salt and pepper. Stuff this mixture back into the potato skins (they will be heaping). Then broil these in the oven until slightly browned. Yummy!!!!!
