I think that in place of wheat you might want to examine all of the different varieties of "whole grains" available to you in the form of bulk bins at the supermarkets or healthfood stores like "Whole Foods". I presume that grains such as: Spelt, oats, corn, bulgur, quinoa, rye are suitable substitutes. I think that the main thing you want out of whole grains is the bulk & fiber complex.

You can eat other grains instead of wheat, like barley, oats, rice, corn, etc.
