Pre-heat your oven to 450 degrees.

Brown your roast on all 6 sides (not 4 sides - don't forget the ends!) in a lightly oiled heavy skillet. Remove to a plate.

Lightly brown some coarsely chopped onions and thickly sliced carrots in the same pan, and deglaze with a 1/2 cup sweeter white wine (Riesling) or chicken stock. Reduce by 1/3.

Place veggies and reduced liquid in bottom of a shallow roasting pan. Place roast on rack on top of veggies.

Place in the oven, and reduce the heat to 350. Cook for 25 minutes a pound, uncovered, for 1 hour. Put another 1/2 cup of fluid into pan.Cook until it is 170 degrees (160 is perfectly fine, but some people don't like the fact that it might still have a pinkish tint in the middle).

Remove from oven and wrap tightly in foil. Remove veggies into ovenproof bowl and place back in oven that has been turned off.

Thicken your sauce, and enjoy!

By the way - Chef Orville, if you can't give a safe answer (I've seen some of your other answers), please take the "chef" off of your ID. It is a real disgrace!

160 degrees as an internal temperature for pork is absolutely safe you are taking a chance with Pork at 140 and 150 degrees.

unstuffed ;cook at 350 for 20 -25 minutes a pound . Internal temp should be 150 with carry -over adding another 8-10 degrees. If you take it out at 160 carry over will add another 8-10 degrees- which means you just killed it .
The problem with today's pork is that has become too lean and as a result it dries out rapidly . Therefore while the pork is roasting make an appropriate sauce to go along with it

The best way to cook a pork roast is in the crock pot put it in with some water on low for 8 to ten hours and it will be very tender and juicy. If you cook it in the oven it tends to dry out. but the basics for cooking in an oven is 350 degrees 20 minutes per pound and the internal temperature should be 160.

I always just throw them in the slow cooker for about 4-6 hours with a little water and I usually just add a onion soup mix on top while cooking for flavor. Easy Easy!

couple hours pork must reach an internal temp of 145 degrees I cook mine well done so it falls apart.
