POOR MAN'S CAKE
1 c. sugar
1/2 c. lard (other shortening may be used)
2 eggs
3/4 c. molasses
1 tsp. baking soda
1 tsp. baking powder
1 c. sour milk
2 c. flour
1/4 tsp. ginger, optional
1/4 tsp. cloves, optional
1 tsp. cinnamon, optional
Raisins or chopped nuts or both may be added
Cream sugar and shortening; add eggs; beat well. Add molasses. Sift dry ingredients; add alternately with sour milk, to the creamed mixture. Stir in raisins and nuts. If sour milk isn't available, add 2 teaspoons vinegar into a cup, fill remainder with sweet milk; let stand to sour while other ingredients are mixed. It was called poor man's cake because it wasn't frosted. It may be frosted with powder sugar frosting. Recipe was used during World War I. Put into a 9 x 13 pan. Bake at 350 degrees until done.

My Mom always called the chocolate cake that she would make a poor man's cake since it did not use any eggs or milk (used baking soda and vinegar to make it rise). Never knew that a "poor man's cake" was actually a spice cake.

1 c Sugar
2 c Raisins
1 c Lard
¼ ts Allspice
¼ ts Cloves
Pinch Of Salt
1 ts Cinnamon (Or To Taste)
1 ts baking soda
(enough flour to make stiff batter)
Directions
Boil together all ingredients. Add water just enough water to cover raisins. Boil until raisins are tender. Cool. Add 1 t baking soda and enough Unbleached flour to make a stiff batter. Pour batter into 9-inch round cake pan. Bake in moderate oven until cake springs back when touched lightly (about 1 hour at 350 degrees F). Serve warm or cold with cream, custard sauce or powdered sugar frosting. Walnuts may be added to batter just before baking.
Or variation.....
CAKE FOR A POOR MAN.....
1 box cake mix from the dollar store, water
make cake mix according to directions and bake.

INGREDIENTS:
1 cup packed brown sugar
2 cups raisins
2 cups water
3/4 cup shortening
2 teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
3 cups all-purpose flour

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9x13 inch pan.
In a saucepan mix brown sugar, raisins, water and shortening. Bring to a boil and boil 3 minutes. Remove from heat and let cool.
In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg and cloves. When raisin mixture is cool, add to dry ingredients and mix well to combine.
Bake at 350 degrees F (175 degrees C) for 30 or 40 minutes. Do not over bake or it will be too dry. Test after 30 minutes. A toothpick inserted into the center of cake should come out clean.

all flour recipes the milk can be substituted for water
eggs are used for binding together
they used lard or dripping instead it works similar to butter
so just use a pound cake recipe and use water and lard
