Foie Gras means "fat liver" and it is used in many dishes and pates. It is not quite as expensive as truffles,but pretty close. The 2 rabbis in Chicago aren't the only ones that have a problem with it. It has nothing to do with the fact that they are rabbis, and everything to do with the manner in which the "fat liver" gets that way. This cruelty is definately "not Kosher" either
Geese (or duck - but the most prized is goose liver) are force fed a special feed, often using a funnel to stuff the gullet, and kept in confined quarters. This ensures a large and fatty liver - prized around the world for its favour and despised around the world for the cruelty to the goose that is fed in this manner. It is a cruel and painful way for many to obtain what they don't need.
I've tasted it, when I was young, and it was great - until I found out how it was made. The same with Blue Delft Veal - won't buy it - won't serve it.

Foie Gras is French for a fatted goose liver. I"m not sure about the rabbts (they don't eat organ meats) but here's how it's made and see if you have a problem with it.
They take a baby goose. It is put into a very small cage, so small that it can't move around and exercise. As it grows, the cage is occasionally enlargened. BUt it spends it's life in a cage. IT is force-fed grain numerous times a day to fatten it up. It becmes VERY fat, even sickly. As a result, it gets what is called a "fatty liver." Then the goose, which is good for nothing now, is slaughtered and the fatted liver retrieved. Sliced and pan-fried very simply with a little salt, it is considered a delicacy by some. No oil is needed as it is already a lump of fat and will not stick to a pan.

Foie gras is goose liver. Two rabbis in Chicago only like chopped liver, made from chickens, and they have patriarchal power issues and want everyone in the world (or at least Chicago) to live according to their crazy ritualistic value system (although they won't like you anyway, even if you do everything they say). So they want to see chopped liver served as an appetizer instead of foie gras.
Ignore them, and don't get your nighties in a knot about this.

Foie Gras is goose liver. Innards are not exactly "clean" in some ways of thinking.

I think it is duck liver, and I have know idea why 2 rabbis would have problems with the stuff. It sounds like it could be a good joke though.

It is the liver from a goose. that has been forced feed. in a very horrible way.
