Sweetie Vegetables:


Ingredients:
Mushrooms 300gr
Onions 2
Carrots 3
Honey 1tbsp
Soya sauce 1tsp
Butter 20gr
Chinese chilli sauce 1tsp
Instructions:
Slice all vegetables separately.
Heat the butter in a large frying pan, and then cook onions over a medium heat for 3mins.
Add the carrots and cook for a further 3mins.
Add the mushrooms, cook for few minutes and then put other ingredients into the pan. Stir slowly for few minutes, then remove from the heat, taste season and serve it.

Beans on toast or have a jacket potato with mushrooms, slices of onion, slices of red pepper, slices of tomato and some Grated cheese! That be the ultimate! Throw the potato in the microwave for like 10 minutes (poke it all over first.) Then take it out, cuttjng the cooked potato almost in half and piling in all your toppings. And then finally topping it with cheese and throw it in the oven for like 2 minutes or until cheese is melted. Very good!!

Sunburst Sqash, Red Bell Peppers, cauliflower, and Portobello Mushrooms. Sauted with a little olive oil. Maybe some orzo pasta or brown rice.

You don't say how vegetarian. I mean, dairy free, egg-less etc.
How about some pasta & vegetables?
For example:

Cook you favorite pasta and toss with a little olive oil, basil and garlic.

Saute in a little olive oil some vegetables like:
Green beans or aparragus, Green onions, Mushrooms and carrots. Season with salt and pepper. Voilá.

INGREDIENTS:

* 4 1/2 cups cooked and mashed sweet potatoes
* 1/2 cup butter, melted
* 1/3 cup milk
* 1 cup white sugar
* 1/2 teaspoon vanilla extract
* 2 eggs, beaten
* 1 cup light brown sugar
* 1/2 cup all-purpose flour
* 1/3 cup butter
* 1 cup chopped pecans

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
3. Bake for 25 minutes in the preheated oven, or until golden brown.

Chili!
*Get a couple cans of a couple kinds of beans
(I like black and kidney).
*A couple cans of diced tomatoes
(you can get them chili flavoured)
*Two big cans of tomato sauce
Chop an onion, a green pepper and maybe some zuchinni or eggplant
(what ever else you like in your chili veggie wise)
Sear veggies quickly in olive oil, toss in olive oil and veggies and all)
--Sprinkle in some cinnamon,rosemary (if you like it), garlic powder (or two cloves of the real thing minced) crushed red pepper (to your liking) and chili powder, black pepper and just a bit of seasoned salt.

The prep for this is sooooo fast.
Literally, dump everything in a big pot and use the seasonings to your taste. Bring to a boil, stir,and then turn down to simmer. It will be good tonight and better tomorrow.
Freeze the rest...good on pasta with cheese and potatoes too. Or, of course by itself with a hunk of french bread.

Have a nice dinner.

Potato-Cheese Pillow Casserole:

Frozen shredded hash browns are combined with cream of potato soup, sour cream, French onion dip, & cheddar cheese, topped with cornflakes.
Ingredients:

• 20 oz pkg frozen shredded hash-brown potatoes, thawed
• 2 sticks butter, divided
• 1 can cream of potato soup
• 8 oz sour cream
• 8 oz french onion sour cream dip
• 12 oz finely shredded cheddar cheese
• 3-4 cups corn flakes, coarsely crushed
Method:

Preheat oven to 350 degrees. Defrost shredded potatoes in a large bowl. Melt one stick butter, mix into potatoes. Stir in cream of potato soup (do not add any water), sour cream, French onion dip, and cheese; stir well. Spread in a lightly greased 3-qt (9x13") rectangular baking dish. Set aside. In a medium bowl, add 1 stick melted butter to the crushed corn flakes, stirring until all flakes are coated. Sprinkle Corn Flakes on top of potato mixture to completely cover. Bake at 350 for 45 minutes, or until topping is lightly browned and mixture is just bubbling at edges.
Notes:

Optional: 1 tsp Mrs. Dash Table Blend 1 tsp chicken boullion granules The following products may be substituted: light butter, light sour cream, low-fat cheddar cheese. For a heartier dish one of the following may be added to the potato mixture: 1 cup diced cooked ham 1 cup shredded cooked chicken 1 cup crumbled cooked bacon

tofu rolled in wheat germ. light fry in olive or palm oil. load on fresh bread. add all the veggies u want. pickle and sea salt chips on the side or another vegan dish like potatoe salad

4 minutes: a salad, ( cucumbers, tomatoes, lettuce, italian dressing, carrots,shredded cheese)
1 minute- Baked potatoe- with butter, cheese, in microwave.
