We would like to use fresh pineapple too if you have a suggestion for that...It is rainy and yucky here so we thought we would grill and pretend otherwise. Your recipes are greatly appreciated.

The basic ingredients of teriyaki sauce are soy sauce, fresh ginger, and pineapple. I have a LOW tolerance for salt, so I use low sodium soy sauce. The purpose of ginger is to cut the salty taste of the soy sauce, and pineapple (especially Hawaiian) adds a sweet taste. Start with 1/2 cup of soy. Add 3 to five slices of fresh peeled ginger. Then add pineapple to taste. Other variations are crushed garlic, herbs (fresh rosemary is nice), and wine. For pork, a little marsala wine would add a nice touch. Some people add brown sugar. Since your grilling, I wouldn't recommend it. The sugar burns.

Let the sauce sit a few hours before you marinate the pork.

Teriyaki Glazed Pork Chops and BBQ Chicken

4 bone-in pork chops, cut 1/4-inch thick
4 boneless, skinless chicken breasts
1 cup your favorite teriyaki sauce, (recommended: Lawry's Teriyaki Sauce)
1 cup your favorite BBQ sauce
Kosher salt and freshly ground black pepper

Place the pork chops in a plastic bag and pour half of the teriyaki sauce over them. Place the chicken breasts in a plastic bag and pour half of the BBQ sauce over them. Marinate the pork chicken in the refrigerator overnight.

Preheat the grill to medium heat. Remove the pork chops and the chicken from their plastic bags and season with salt and pepper. Place the pork and chicken on the grill. Grill the chicken about 6 minutes per side or until cooked through, turning at a 45 degree angle to create grill makes. Grill the pork about 5 minutes per side or until cooked through, turning at a 45 degree angle to create grill marks. Baste the pork with the rest of the teriyaki sauce and the chicken breasts with the rest of the BBQ sauce throughout the cooking process. When the pork reaches an internal temperature of 160 degrees F and the chicken reaches an internal temperature of 170 degrees F remove them from the grill and let rest for 5 to 10 minutes before serving.

And Japanese teriyaki sauce

* 1/2 cup soy sauce
* 1/2 cup *mirin (sweet rice wine) (soy sauce : mirin = 1:1)
* 2 tbsp sugar
1. Pour all ingredients in a pan.
2. Stir the mixture well.
3. Put the pan on low heat and simmer for a couple of minutes.
4. Remove from the heat and cool the mixture.

I never had pineapple in teriiyaki dish, it is a very new idea to me...., I have just checked my Japanese recipes / cook books here and couldn't find one has pineapple. Anyhow, I'm lazy to translate the Japanese recipes to English but I found some good websites for your reference.

(of course they recommend you to use Kikoman teriyaki marinade, but you can prepare your own with recipe of the first website, there are a lot of other nice recipes in Kikoman website too.)

I also like to add around 1 tablespoon of miso (Japanese soy bean paste) and more grated raw ginger in the marinade for pork but not for beef steak.

Teriyaki Sauce

2 tablespoons cornstarch
1/3 cup soy sauce
1/4 cup sugar
1 garlic clove, minced
2 teaspoons minced fresh ginger
1/4 cup dry white wine (optional)
2 cups beef broth (or 2 1/4 if not using wine)
In a small saucepan, stir together cornstarch, soy sauce, sugar, garlic and ginger. Stir in wine, if desired, and broth.
Cook over medium heat, stirring, until thickened.

Lawry's makes a really good teriyaki marinade that we always add pineapple or mango to.
