STRUDEL COFFEE CAKE
3/4 c. sugar
1/4 c. shortening
1 egg
1/2 c. milk
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. brown sugar
2 tbsp. flour
2 tbsp. melted butter
1/2 c. chopped nuts
2 tsp. cinnamon
Mix sugar, shortening, egg, and milk. Add flour and baking powder. Mix batter well with a mixer; set aside. Mix with a spoon the salt, brown sugar, flour, melted butter, nuts, and cinnamon. Pour into a greased and floured 8 x 8 inch square pan 1/2 of batter, 1/2 of crumbly mixture, the rest of the batter, and top with rest of crumbs. Bake at 350 degrees for 40 minutes.

Keep it simple, Sweetheart. Get a box of Bisquick. There is a recipe on the box for streusel coffee cake. Make the streusel and the cake mix. Put the batter in the pan, as directed. Drop several tablespoons of raspberry preserves on top and, if desired, knife them through the batter. Then top with the streusel and bake. It tastes really good and you can use any flavor preserves!

Oh my gosh, that sounds so good right now! Here's a couple recipes I found, I'm gonna definitely try the first one!
Raspberry Cream Cheese Coffeecake
2 1/4 C. flour
3/4 C. sugar
3/4 C. butter
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
3/4 C. sour cream
1 t. almond extract
1 egg
8 oz. cream cheese softened
1/4 C. sugar
1 egg
3/4 C. raspberry jam
1/4 C. sliced almonds
Heat oven to 350° F. Line the bottom of a 9 or 10 inch springform pan. Grease and flour pan.
In a large bowl, combine flour and 3/4 C. of sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Set aside 1 C. of the crumbs.
To the remaining crumb mixture, add baking powder, baking soda, sour cream, almond extract and 1 egg. Blend well. Spread batter over bottom and 2 inches up side of pan.
In a small bowl, combine cream cheese, 1/4 C. sugar and 1 egg. Blend well. Pour in batter lined pan. Spoon jam over cream cheese mixture. Combine the almonds with the reserved crumb mixture. Sprinkle over jam.
Bake for 45 - 55 minutes or until cheese filling has set and crust is golden brown. Cool for 15 minutes. Remove sides from pan.
Serve warm or cool
Raspberry Struesel Coffecake
Coffee Cake Ingredients:
3/4 cup granulated sugar
1/4 cup LAND O LAKES® Butter, softened*
1/2 cup milk
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup fresh or individually frozen raspberries, unthawed
Streusel Ingredients:
1/2 cup granulated sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup cold LAND O LAKES® Butter*
Heat oven to 375°F.
Combine 3/4 cup sugar and 1/4 cup butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add milk and eggs; continue beating, scraping bowl often, until well mixed. Add 2 cups flour, baking powder, salt and nutmeg. Reduce speed to low. Beat, scraping bowl often, until well mixed.
Gently stir in raspberries by hand. Spread batter into greased and floured 8-inch square baking pan.
Stir together all topping ingredients except butter in small bowl; cut in butter until mixture resembles coarse crumbs. Sprinkle mixture over batter.
Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean.
Makes 9 servings.
