You can't go wrong with a pasta salad. Most grocery and deli's have some already made and are very affordable. They will even let you taste it before buying. The same with potato salad. I assume there will be a cake for desert, so I wouldn't go that route. Good Luck and Good Eats!

Seven layer salad always goes over well, and it's easy to make.

Shred a head of lettuce and place it at the bottom of a deep bowl. Next, put some crumbled fresh cauliflower over that. Top that layer with chopped hard boiled eggs, and then pour a bag of frozen peas on top of the eggs.
For the next layer, sprinkle crumbled bacon on the eggs. The next layer is some diced red onion.

Make a dressing of two cups Miracle Whip with some onion and garlic powder and sugar to taste. Spread over the veggies to the edge of the bowl, making sure that they are completely covered. Then, sprinkle with grated Cheddar cheese and let set for 24 hours.

Before serving, mix the dressing into the veggies so that they are all combined. It's good stuff, there's no real measuring, it's not very expensive to make, and people love it!

BAKED ZITI


SERVES 15 to 20 ON A BUFFET


INGREDIENTS

1 pound hamburger
1 pound ground pork or sausage
2 onions, roughly chopped (I like using the sweet ones.)
2 bell peppers, roughly chopped (Use any color you like.)
2 cans (28 ounces each) of chopped tomatoes or tomato puree (Depending on whether you like chunks of tomato or not.)
8 cloves or to taste of crushed garlic
Basil, oregano, parsley (I recommend fresh) or dried to taste
Salt and pepper to taste
Red wine
2 boxes (16 ounces each) of Ziti, with or without ridges, your preference
Olive oil
3 cups of shredded cheese, either Mozzarella or a combination of Italian cheeses
Preheat over to 350° F. In a large bowl combine the first 8 ingredients until just mixed. Transfer to a large skillet and cook until meat is cooked well through. Add red wine if mixture seems a little dry or even just to flavor.

While this is cooking, cook the two boxes of Ziti according to directions on the package and drain; do not rinse. In a large bowl (big enough to accommodate the macaroni as well as the sauce you're making) toss macaroni with about 2 tablespoons of olive oil. When sauce is done add to bowl with macaroni and toss to coat evenly. Place in pan (see note) and sprinkle on all the cheese. Bake, covered with foil, for 1/2 hour if warm, an hour if previously prepared and refrigerated. Uncover and bake for an additional 15 minutes.

BLT Salad

1 head romaine lettuce, washed and torn
2 roma tomatoes, chopped
1lb bacon
3/4 cup mayo
1/4 cup milk
1 tsp garlic powder
1/2 tsp black pepper
1 cup croutons OR 1/2 cup hulled sunflower seeds

chop bacon into bite size pieces and fry until crisp--drain on paper towels. Combine mayo, milk, garlic powder and pepper. Chill for 30 minutes. When ready to serve, combine all ingredients and toss. Don't add the dressing until you're ready to serve, the bacon and croutons will get soggy. Enjoy!

something you already now how to make or go to your dollar store and buy a cute platter buy some wheat and white bread some turkey ham and cucumbers for the veg heads make sandwiches then take your cutest cookie cuter and cut out cute shapes arrange them on the platter with a little bowl of mayo and one of mustered in the middle that way every one is happy and you should be able to make it a lot cheaper than buying it i did this once for a party to touch it up though i put some pickle's and olives on the tray it was a hit

KIELBASA WITH SAUERKRAUT:
2 lbs. kielbasa
1 lb. medium shell pasta
2 Tablespoons oil
2 onions, chopped
2 large cans sauerkraut
1 Tablespoon caraway seeds
salt and pepper to taste
In large saucepan; boil kielbasa for 10 minutes and cool. Reserving the same water; boil pasta as package directions, drain.
In large skillet, saute onions in oil until transparent. Drain and rinse sauerkraut; add to onions. Add caraway seeds, salt and pepper. Slice kielbasa and add to mixture. Lightly brown sauerkraut; adding more oil if needed. Stir in pasta. Heat 5 minutes and serve.

Buy two boxes of scalloped potato mix. Add a 10oz frozen mixed veggies to them when you mix them up. Bake according to package directions. To kick it up a notch, get a package of cheap ham lunchmeat, cut it up, throw it in before baking.

Or:

Get a package of turkey breast lunch meat, two boxes of stove top stuffing, a box of frozen mixed veggies and a jar of turkey gravy. Make the stuffing according to directions, adding the veggies in from the start. Then put a large spoonful of stuffing/veg mixture onto a slice of meat, roll it up (it should be the size of a small eggroll) and place it in a baking dish with the end of the meat down so it doesn't unroll. Keep doing this until you have a bunch of meat roll-ups lined up next to each other. Pour gravy over the whole thing. Cover with foil. Bake at 350 for about 35 minutes.

Or:

Do baked beans the cheat way: Get several cans of Bush's baked beans (already flavored... with stuff like maple and brown sugar and bacon etc) - mix 'em up... like three different flavors... and then mix 'em up in a baking dish and bake them at 350 for at least an hour, 90 minutes if it's a big baking dish. Let them cool before you cover them and folks will think they're homemade. If you want to get wild, get a pkg of smoked sausage, cut it into slices or chunks and put it in there before you cook them... or a package of Little Smokies and then you don't have to slice them up.

Or:

Another personal favorite - pasta the cheating way - In a pot, put one jar (26oz) of pasta sauce and one jar of water, bring to a boil, add one (16oz) box of elbow macaroni. Simmer on medium heat, stirring frequently, until pasta is done - about 10 minutes or so, and it's thick enough to look good. Dump into 2qt (9x13) baking dish, top with 8oz shredded mozzarella cheese. Bake at 350 for about 15 to 20 minutes until cheese is melted and bubbly. Pull it out, cover it with foil and take it to work.

Or:

Just get a bag of baby carrots, a box of grape tomatoes, some broccoli florets (already bagged in salad department) and a container of dip. Arrange this on something... voila... veggie tray.

Lasagna, the perfect food.

Make it the night before using UNCOOKED noodles (but be sure to cook the meat before you layer it in, if you use meat). Let the sauce soak in overnight and then it takes only about 40 minutes in the oven and it's ready to go.

Dips are always easy & cheap, and are good for potlucks. Try making (or buying if you don't want to cook) hummus with pita chips and cut-up vegetables, or spinach and artichoke dip with different kinds of crackers and breads.

Try to find things that are good at room temperature, so you don't have to worry about keeping them hot or cold.
