What about goldfish and blue jello. Sounds gross but kids will like the fish and ocean theme.

Here are some good ideas for fun snacks:
-dried fruit
-"Bugs on a log"....spread peanut butter in the center of celery stalks and top with "bugs"-chocolate chips or raisins.
-cut a banana lengthwise and then in half. spread peanut butter in the middle and stick the half pieces together to make a little peanut butter banana sandwich.
Homemade Popsicles
Freeze any fresh fruit juice (except pineapple juice which does not freeze well) and pour it into small paper cups or ice cube trays. Insert popsicle sticks. Freeze until solid. Remove popsicle from cup by running under hot water for about 10 seconds. Blending yogurt with fruit juice is another option.
plus there are always classic snacks like cookies and milk, brownies, or cupcakes.
if you don't feel like making anything, some good store-bought snacks are chex mix, goldfish, triscuits or wheat thins, and cheetos.
its a good idea to take two snacks in case the children are picky or have allergies. let the teacher know of any ingredients that children may be allergic to.

there are too many kids around these days to take peanut butter anymore, unless you use a peanut free nut butter, but I still wouldn't take any chances. My son loves the peanut free granola bars with the fruit. If you are so inclined, you could make cookies or little muffins, just avoid the nuts. My mom makes this amazing banana bread from the nearly rotten bananas at her place and mine, they freeze nicely as well if you have more than you can use for one batch. Usually she puts walnuts in it, but because my son is still too young for nuts she puts chocolate chips in it instead, like paddy duke cake without the icing. I love it both ways, my husband prefers it with the chipits. You could do a cheese spread like cheese wiz on celery with raisins stuck in it. Cut up fruits with a simple non runny dip, I think there is a chocolate mousse type one that is made with cottage cheese.
the links below are just an example from that site, they have a lot of good ideas.

Make sure to check with the school. Parents are no longer allowed to bring home made treats to our kids classes here because of kids with allergies, that and you never know who keeps a clean kitchen and whose is a bacteria factory. We have to buy store bought- totally sucks!! If you can make treats my boys love squashed frogs. You take marshmallows and butter like for krispy treats and melt it - add green food coloring. Pour over corn flakes. then plop onto wax paper and add m&m eyes. Kinda gross but they taste really good and little boys love them!!

you could make rice krispie treats and cut them into small pieces (bite size for a kid). that way they don't make a sticky mess and it is tasty for them.
if you are feeling more creative than that, you could make a fun snack with pretzel sticks, goldfish crackers and peanut butter (just make sure nobody has a peanut allergy). you put a little peanut butter on a plate and have them dip their pretzel in it. then put some goldfish crackers in a dixie cup and have them try to "fish" with their peanut butter pretzel fishing pole :)
** i forgot, you could also use that marshmallow fluff instead of peanut butter...

Make a home-made chex mix. Mix corn chex, stick pretzels, cheetos (not the puffy ones), and goldfish crackers. Or try rice krispy treats. Those are easy and don't require baking.

Bring mini yogurt, tiny boxes of raisins and goldfish crackers. That way everything is sealed and most likely kids aren't allergic to these.
