It depends on what you are making. I seem to have no problem putting the sauce in a plastic container and putting it either directly in the fridge or in the freezer. If you put it in the fridge it will last maybe a week if not less. It can be reheated when needed in as little or as much as you need. If you freeze it you will have to pull it out either the night before of the day of that you need it. It can be put back into the freezer after recooked.

Make an ice bath. Get a pot or tub ;larger than the one the sauce is in. Put a lot, like half full, of ice and add water, put container of sauce in and gently keep it moving so you don't get extra water in your sauce but the heat will 'transfer' out of the hot stuff quickly.

put the plug in the sink, run the cold water and put the pot with the tomato sauce in the water for bout 5-10 mins and it should then be cool enough to put in the fridge or freezer!!hope it taste good...enjoy!!!

Put it in an ice bath, putting it in the fridge or freezer is risky 'cause the heat of the sauce will raise the temp of the appliance and may turn other foods bad.

cool it for as long as you can then in the car let the cold air or ac hit it or make other dinner things or even make a plat that needs hot tomatoe sauce like spageti or a special dinner you made up

put it in ice cube trays & bang it the freezer, its quicker in small quantities, or, use it hot with pasta or beans. Enjoy ... Ikey
