I have just bottled a batch of Ausie Restricted Quantity Shiraz that has been fermenting at my local Ontario Winery for 6 weeks. I am unsure as to how long to keep it to enjoy at its best. I will store in my cellar (circa 16 deg), bottles are corked and sealed and will be kept horizontally. Thanks

Ha Ha, many funny answers.

Really though, could take 2-3 months to get over bottle shock, then you may see improvement for 2 - 4 years but that's about it if it did not have oak aging.

Most wine makers will tell you that even though there are some vintages that will be best aged for the most part give it 1-3 years and it will be at it's peak.

store it in a cool dry place with very little temp. fluctuation to acheive it fullest flavor and quality.

In Saudi Arabia this would be considered 'vintage' but at your temperature at least 6 months then try a sample!. Ikey

Shiraz is a wine best served young and fresh....

give it up to a year, no longer.
