fast and easy...hmmm.
I think I can do that.

BASIL CAESAR SALMON
4 salmon fillets
1/4 c caesar dressing
pepper
1 c caesar salad croutons, crushed
1/2 c grated parmesan
2 tsp dried basil
2 TBS OO

Place salmon in greased pan. Spoon the salad dressing over fillets; sprinkle with pepper. Combine croutons, parmesan and basil. Sprinkle over fillets and gently press into dressing. Drizzle with OO. Bake uncovered at 350 for 15-20 min.

Serve with white rice and steamed veggies, and caesar salad.

OR
(my own concoction)
CRABBY FETTUCINI:
1 pkg crabmeat, chopped
1 onion, chopped
2 TBS minced garlic
2 shakes garlic powder
4 TBS butter
3 TBS Italian seasoning, more or less to your liking
1 box fettucini
1 can diced tomatoes

Cook fettucini according to package. Meanwhile saute onion and garlic in 2 TBS butter. Add seasonings and butter and stir. Add crabmeat and stir . Add tomatoes. Cook 5 more minutes to blend flavor. Serve over fettucini and sprinkle with grated parmesan.

Great with french garlic bread and a salad.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.


BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

lazy man lasagna:
2lbs. ground beef season and cook add to two jars of spaghetti sauce set aside, boil one bag egg noodles drain and add one container cottage cheese and one bag of mozz cheese. layer in a crock pot and pour some parmesan cheese on the top. cook in a crock pot for four hours on low or two on high. I was very skeptical about this recipe but tried it and the whole family loved it.
If you like stove top stuffing then take about five chicken breasts and put seasoning on them put a piece of swiss cheese on the top of them take two cans of cr. of chicken soup mix with less than one can of water pour mixture over chicken sprinkle bag of stuffing over the top and cover with tinfoil cook for an hour at 375 .

boneless pork chops browned 1 pkg onion soup mix patatoes peeled 1bag baby carrots 2 cans cream of mushroom soup brown chops add soups and water to desired consistancy add patatoes and carrots cook stirring untill veggies are soft

I've got a collection of recipes I found on Yahoo Answers that I have saved as they sound so good. Here are a few of them:

Veggie Sandwiches
4 English muffins, split and toasted (or can use whole wheat bread)
1 avocado, mashed
1 cup alfalfa sprouts
1 small tomato, chopped
1 small sweet onion, chopped
4 tablespoons Ranch-style salad dressing
4 tablespoons toasted sesame seeds
1 cup shredded smoked Cheddar cheese

DIRECTIONS:
Preheat oven to broil.
Place each muffin open-faced on a cookie sheet. Spread each half with mashed avocado; place halves close together. Distributing ingredients evenly, cover each half with sprouts, tomatoes, onion, dressing, sesame seeds and cheese.
Place under broiler for about 5 minutes, or until cheese is melted and bubbly.

Oeey Gooey bars

1 box yellow cake mix
1/2cup margarine melted
1 egg
1 cup coconut
1/2 cup chopped nuts
8 0z cream cheese softened
2 eggs
1lb box powdered sugar
1 1/2 tsp vanilla

Mix together cake mis, meltedmargarie and i egg. Press this mixture into a 9x13 pan. Add a layer of cocout and chopped nuts. Mixtogether cream cheese, 2 egss, powdered sugar and vanilla. Spread over coconut and nuts... bake ofr 35 nim at 350. cool anbd cut into squares and then be prepared for everyone to ask you to bring this to every function

guacamole:

2 ripe avocados
2 teaspoons lemon juice
1 1/2 teaspoon salt
1/4 cup regular mayonnaise
1/4 cup regular sour cream
1 teaspoon ground cumin
1 teaspoon chili powder, or more to taste
1 medium tomato, very finely diced and juice squeezed out
or
1/4 cup mild salsa
2 scallions, finely minced
2 cloves garlic put through the garlic press




Nothing is better than pork chops baked in the oven and served over white rice and red beans. First you mash garlic, salt, pepper, and oregano. smear on the chops and bake in oven. Make white rice. 2 cans of red kidney beans rinsed and drained. In a skillet add olive oil about three tbsp. one diced onion, 1/2 bell pepper diced, garlic, salt, pepper, oregano and one can tomato sauce and 1/2 can tomato paste. Let cook about 10 minutes. Put this mixture in pot add beans and 2 cups of water. let boil till thickened. pour some over the rice and then place a pork chop on top of it.

Cinnamon-Apple Nachos

You will need:
2 whole wheat pita breads
1/4 cup melted butter
3 tbsp sugar
1 tsp cinnamon

cut pitas into triangles--4 triangles per pocket--then peel layers apart--place all pita triangles onto a cookie sheet. Brush with melted butter and sprinkle with cinnamon and sugar mixture. Then bake for about 5-7 minutes in a 400' oven. I usually cook mine a bitter longer so they're sure to be crisp.

While they're cooking put 1/2 cup creamy peanut butter (use natural if you can) 1/4 c. milk and 1tbsp honey into a sauce pan and melt into a sauce. You may need to add more milk to get a runnier sauce.

WHen the chips are ready put them on a platter. Pour sauce over them. Then top with diced green apple and dice banana.



Sometimes I make this pie that's kinda like a cheese cake too. What you do is soften an 8 oz. pkg of cream cheese at room temp, put it in a bowl and add any flavor of pudding mix..whatever you prefer. Add a cup of milk. Beat all this together with a mixer until it's well blended. Then pour it into a graham cracker crust. Let it set in the refrigerator for about a half hour before serving. It's very yummy and easy to make...only takes about 5 minutes!


GOODIE BARS
1/4 stick butter - melted
1 cup graham cracker crumbs
1 cup shredded coconut
1 cup chocolate chips
1 cup chopped walnuts
1 can condensed milk
Melt butter and mix with graham cracker crumbs; press into ungreased 9 x 13 inch baking pan. Spread coconut , then chips, then walnuts. Pour condensed milk on top and bake at 350 for 30 minutes. Cool and cut into squares.

This is my traditional 4th desert. (bananna pudding) it's really easy you will need.

(1) 11in rectangle baking dish.

(2) Boxes Vanilla Wafers

(1 tablespoon) Butter

(2) regular size boxes of Vanilla pudding (instant)

(1) bunch banannas

(1) container Kool Whip, (origonal or vanilla)


You mix up the 2 packages of pudding in a blender with 1 cup of vanilla wafers and 1 bananna. (use a low setting)

You crumble a cup of Vanilla wafers, mix with 1 tablespoon butter (softened) and press in bottom of the baking dish.

Spread a thin layer of the pudding in the dish and place a layer of wafers, and a layer of bananna slices, repeat this step once

Spread a layer of whipped cream across the top, and garnish with the remaining wafers (broken into pieces), and bananna slices.

Cover and refrigerate until served.
