I have some corn tortillas I'd like to use with dinner, but they are well past the date. However, there aren't any mold spots and they are still soft. What do you think, okay to use?

i have eaten tortillas that were WAY out of day, like 6 month or more. they should be fine...

I have never had any problem eating tortillas past the freshness date. I think (THINK) that date just means that it has to be sold by then, but they seem to be safe beyond it. If any doubt tho, tortillas are pretty cheap, you might be ahead to get a fresh package.

The fresh date is suggested so that retailers get their product sold before then. Most items are good for another 30 days past the expiration date.

I have kept them for weeks. Add a little moisture and stick into the microwave for a few seconds.

If they are too stale just cut them up and deep fry them to make tortilla chips.

Oh sure. Corn tortillas do not go bad easily. In fact there are lots of good recipes for old stale ones. Here's one I like:

Yes, okay to use. I've done that many times. If they are not hard or moldy - go ahead and eat them.

I'm bad about this, and I'm sure it will kill me eventually, but I do. Taste a little bit of it... if it's really bad it will taste stale.
